- This Mediterranean cod en papillote is the most genius way to quickly achieve a simple, healthy, and super delicious dinner!
Let's just say I'm convinced that "en papillote" (or "in paper") has become one of my favorite ways to do weeknight dinners. It's a French cooking technique where a combination of fish and veggies are folded into a parchment paper pouch, then perfectly steamed in the oven.
This Mediterranean recipe hits the spot with simple and fresh coastal flavors while ensuring you have four all-in-one meals done at the same time. Love it!

Lisa, I first tasted fish en papillote years ago in the French Quarter. It was outstanding. May I ask what your fish source is? The fish I buy doesn't always taste "fresh." Do you buy frozen? Fresh caught? Farm raised? I need help with this so that I can consume more of it. Thanks for this great-looking recipe.

I love seafood and as much as I enjoy salmon cod is not only more affordable, but you can't beat its flaky white meat. I have been looking for different ways to prepare cod that sounds appealing to me, and this recipe is quite appealing to me.

Looks so good. I too was born in Auckland and moved to Australia when 15.
I have been revisiting your videos as I am on a serious wellness journey. I have arthritis, a fatty liver, am gluten and dairy free due to intolerances and trying to eat healthier. I have lost18 kilos in the last year (yes am proud and not bad for a over 60+ female) reduced my cholesterol (omg it’s now normal) and liver has improved.
I have depression, anxiety and PTSD so meal prep and batch cook soi always have good food in the freezer.

You can use almost any other fishes that you like.
I still don't like olives, but I totally get it! I haven't had capers but I wonder.
You can also use capers as well 😊

Used this technique on a variety of dishes. But i'm using tinfoil, placing the ingredients right in the middle and folding all the edges up to avoid seaps while steaming.

@@Annikichan My Air a fryer has a function for fish, meat, chicken etc. I just pressed
the fish function and it came out perfect, very tender and juicy and not dry. Also put the dish over lemon slices and wrapped it in the paper.

Would this be okay to prep in the parchment in the morning and sit in the fridge until that evening?
That should be okay - although, save the olive oil til right before you put them in the oven.
