For those wondering what a "hot oven" is. Source is Wikipedia.
A cool oven has temperature set to 90°C (200°F), and a slow oven has a temperature range from 150-160°C (300-325°F). A moderate oven has a range of 180-190°C (350-375°F), and a hot oven has temperature set to 200-230°C (400-450°F).
Is there a reason these videos had to get shorter and faster? I actually enjoyed the 5 or more minutes of you cooking.

What is "Hot Oven"? How many degrees? 180 C?

+Vendegra That was my question too. If I were to guess, I'd say around 180 C (350 F). Fish is very light compared to red meats, and the fish is sitting right on top, so there's no dough or extra food for the heat to work through. Also, USDA requires fish to be ~63 C (145 F) to be safe to eat. For comparison, Chicken needs to be 74 C (165 F). So this will probably cook pretty easily. I'm going to try 180 C and see what happens. If everything goes horribly wrong, I'll come back here and let you know.

What's a good sub for the sole? I've never seen it at the store here in Florida. We have other white fish like snapper, talpia, flouder, sea trout.
+David Andrus I was wondering the same thing. What I do know is that the parchment paper technique works for just about every fish. For example, you can do salmon in 15 minutes this way, and it comes out moist and perfectly medium.

Gordon, I remember u went to Kerala, India cooked pearl spot fish in banana leaf on a houseboat and compared it with papillote. The episode was awesome.

2. My oven unevenly bakes, so what can I do so the fish cooks evenly?

Try rotating the food?
Put it sideways and if it doesn't work try the other way.
+cheyenne martinez yeah i usually rotate my food 180 degrees about halfway through to try and get more even cooking. opening the oven more than once might cool it off and slow the cooking process. no idea about the tinfoil though. it might change the cooking times because metal is a better conductor of heat than paper, not to mention that it is thicker and reflective. that one is a do at your own risk.
