- Sheet pan eggs are the best "cooking for a crowd" breakfast recipe. And this Mediterranean version loaded with tomatoes, onion, arugula, and feta cheese is one super tasty healthy breakfast idea! It's also incredibly easy to make.

This breakfast is absolutely delicious! I've already made it several times with different veggies. I recently made the Greek sheet pan chicken with loads of extra veggies so I could use the leftovers to make these sheet pan eggs. I added a bit more garlic while warming the veggies up on the sheet pan, then added arugula and spinach to the egg mixture before cooking. DELISH!

Made it last night and it was delicious! I found some feta with sundried tomato that paired really well. Got a little creative (for me) and stirred sweet red chilli sauce into some greek yoghurt which was a great topper but really, a dash of tabasco with some extra feta might be the favourite. Can't wait to take it to work in wraps. Very versatile, thanks Lisa.

I have made the Mediterranean sheet pan eggs and its Delicous!! You wont regret making it. When I warm it up, I put in microwave 30 seconds or so and put a paper towel folded underneath the piece I am reheating. I make my toast at same time and add Basil Pesto on toast and a bit more of feta. Sometimes I add Shredded cheese too!

great recipe. Thanks. Roasting tomatoes really takes the flavor to a new level. Another great idea is to roast tomatoes along with garlic and onion and then blend it all up for homemade tomato soup that is so rich and creamy you would think there was dairy in it but there is not.

I made something similar last summer, except for the onions. I also added some olives and named it an oven omelette. Not only is it crazy tasty, but also super nutritious and leaves you full for hours!!

This looks super yummy! I'll definitely make this next week, but I'll try a more wintery choice of veggies. Btw, one of my favourite elements of the videos is always the part when Lisa says "... a medium-sized onion..." and produces one of the largest onions I have ever seen 😂
Yep, you can always swap the veggies for something else 😉 And I know... onions here in the states are huge!
Yeah! She says half a medium onion and I'm like that's one huge onion 😂. Same with the garlic cloves 6 of those I think would be at least 10 of mine.

We are enjoying your cook book! Made the lemon oregano chicken and potatoes and the broccoli salad for last weeks lunches, they were delicious! Though I couldn't find whole chicken legs where I went. I'll have to look around different stores next time, but thighs worked just fine. :) Excited to try some more recipes this week.
