    HOW TO ROAST BUTTERNUT SQUASH
    1 large butternut squash (about 3 pounds), peeled and seeded and cut in 1-inch chunks
    1 tablespoons avocado oil
    1 teaspoons kosher salt
    1/2 teaspoon freshly ground black pepper
    Preheat the oven to 425 degrees F.
    Place the squash on a rimmed baking sheet and drizzle with the olive oil, salt, and pepper. Gently toss everything together to coat the squash .
    Spread the squash out into one layer (if needed, use two pans to avoid overcrowding) and roast for 25 to 30 minutes, turning once half way through. Enjoy!
    Makes 4 servings.

    CRAZY EASY BUTTERNUT SQUASH SOUP RECIPE
    1 large butternut squash (about 3 pounds), peeled and seeded and cut in 1-inch chunks
    1 yellow onion, chopped
    1 teaspoon kosher salt
    1/2 teaspoon black pepper
    4 cups low sodium veggie broth
    Preheat the oven to 425 degrees F.
    Place the squash and onions on a rimmed baking sheet and drizzle with the olive oil, salt, and pepper. Gently toss everything together to coat the squash .
    Spread the squash and onions out into one layer (if needed, use two pans to avoid overcrowding) and roast for 25 to 30 minutes, turning once half way through.
    Let the veggies cool down enough so that you can work with them and then place the roasted squash and onions in a high speed blender along with the broth. Blend until you have a rich, creamy soup (adjust broth as needed, you may need a little more or a little less).
    Transfer to a pot and heat over a medium heat until warmed through. Adjust seasonings and enjoy.
    Makes 4 cups of soup.
    *NOTE: I like to top with this soup with roasted pumpkin seeds and goat cheese. This is of course optional, but very delicious.

    BUTTERNUT SQUASH + KALE SALAD RECIPE
    1 small head of kale, stemmed + chopped
    2 teaspoons extra virgin olive oil + pinch kosher salt
    2 cups roasted butternut squash
    1/3 cup walnuts
    1/3 cup dried cherries (or cranberries)
    1 avocado diced
    dressing
    2 tablespoon diced red onion
    2 tablespoons extra virgin olive oil
    2 tablespoons apple cider vinegar
    2 tablespoons orange juice
    salt and pepper to tase
    Place kale in a large bowl and drizzle with 2 teaspoons of olive oil and sprinkle of kosher salt. Using your hands, gently rub the oil and salt into the kale leaves. This helps to keep the kale nice and tender.
    Add the butternut squash, walnuts, cherries and avocado into the bowl with the kale and set aside.
    In a spouted cup or mason jar, combine red onion, extra virgin olive oil, lime juice, orange juice, salt and pepper. Whisk together and drizzle over salad. Gently toss everything together and enjoy.
    NOTE: If you are not trying to keep this salad vegan, a little bit of feta cheese or goat cheese over the top makes for a rather lovely addition.

    Thank you for keeping it simple! I noticed after turning 50 that I wasn’t able to lose weight as I had before menopause started to set in. I had managed to lose 100 pounds eating clean. After my doctor told me I was tipping the scale at 300 pounds I could not believe it, but my home scale didn’t lie. Despite being depressed after a major car accident left me with no teaching career and hardly being able to move; I was determined to turn my life around. I began shedding the weight slowly, since exercise hasn’t been an option. I’m 120 lbs lighter now but still have a little further to go! Please keep inspiring people to make the change to a healthier lifestyle it’s so worth it! I need these simple delicious recipes to keep going and to help my body prepare for another surgery.     As Nutritionist, I really love the way you cook. CLean, never too seasoned, keeping things as simple as possible and always balancing, fats, carbs, proteins and so on. You would have been a great Nutritional Therapist :)

      I agree. I import them into Whisk so I can have my recipes in one place and they almost always get a very high health score (8-9) and mostly low gycemic score as well. Learned alot from nutrionists.
      Bought a textbook and had a free consult with one from LLS.ORG. Gave me many healthy tips. After a bad bout with the flu she recommended 20-25% protein for several months. I have cll and am in my 60s. I love they are easy to make and never have to worry about recipes "bombing." :)

    Thank you for the video. Definitely made it easy for me to try something different. I microwaved the squash for 3 minutes after I poked breathing holes in the skin, and then started the preparation. It was easier to peel and cut. Olive oil, garlic, salt, and pepper…..yummmmm

    My friend was cooking a Mexican meal, beef, beans & guacamole for tacos or burritos. I had a butternut squash which i informed her we could season with Mexican herbs & flavors,, garlic, cumin, salt , pepper and a sprinkle pepper flakes and some olive oil baked in the oven. We sat down to eat our meal, she kept saying the butternut squash was so good she kept the leftovers, which she nevers does. I put my butternut squash in my tacos with the beef and guacamole was so good.

    We don't get a variety of squash at the supermarket in Ireland. We do get butternut squash so I use it instead of all the squash recipes. Butternut squash and sage risotto. Delicious. I've never roasted it ahead. Definitely doing this.

    I made a potato leek soup the other day and added a dry roasted acorn squash plus two small carrots to the mix. Absolutely tasty! 😋 I didn’t have to add any dairy to the soup like I normally do to make it creamy.

    I love butternut squash! For the holidays I roast the squash, Brussels sprouts, dried cranberries and maple candied pecans. It's a huge hit! My all time favorite is butternut squash soup.

    I made this soup tonight. I added garlic and half a jalapeño to the roasting pan. Then put a few leaves of fresh basil in the blender. It was so good!

    Another option for blending is to put in your pot, add broth and blend with a stick blender in the pot 👍
    One less dish to clean 👌

    I also do love this recipes especially for salad dressing! Simple and healthy! Kale massage is very useful! Simple, easy to follow and healthy! Pumpkin seeds snack tip was also useful. Healthy snack and no need to waste! I did enjoy it! Thank you so much!!

    Love this! Just made a butternut squash soup in my vitamix the other day. (w/ roasted onions, apples, garlic) I'm so lazy, I just chop that baby in half and then throw in oven and then scoop it all out. You made chopping look so easy, gonna try it your way next time. And I love that you added goat cheese. Can't wait to try that too! Thanks so much for this great video!

      I cut mine in half and roast like that too. It does take longer but I often do several at once and freeze the x-tra's.

      Hi Valerie, I use either red delicious or gala or pink lady...usually just red apples, anything really works but I don't think granny smith would taste right...only in pie. :) hope your soup is yummy.

    Try a little curry spice with the squash, onion, and apple soup. I've made a similar soup for years, but I never thought to start by roasting everything. I bet that will taste even better!
