I remember from my school days the raspberry and coconut sponge cake with custard. The smell coming from the school canteen pre-lunchtime was so enticing, I can smell it to this day 60 years later.
As an American, I’ve never heard of this before, but I can just imagine how good this would be & would be so popular with everyone, but especially kids.

We loved this when we were kids in the 60’s. Today people would say “Oh my goodness, all that fat and sugar!”. But unlike kids today, we lived very active lives, most of it outdoors and we didn’t live in centrally heated houses. We needed those calories for energy and warmth. We also didn’t constantly snack in between meals.
Agreed. We were out until the lights came on as they say. We were all very lucky back then - all active and enjoying. Not sitting around. Fun days! Best, Rik
Yep, I stayed out all day on my scooter. Mum would have to clean out the fireplace before it warmed up in the house. She would put the gas oven on first thing to keep us warm. She was so happy when dad had a gas fire installed.

A lot of dessert places near me sell these and the cornflake part is a little on the softer side. The ones I had in school the cornflake topping was hard and crunchy like a cornflake cake. I enjoy them that way a lot more. Gives nicer contrast

Yes keep calm. Always taste, some folks don't like that bit - I do! It's for a reason - many channels show cooking food which simply would taste yuk. Everything I make works, its just a case of Taste and Adjust. We all like different ingredients. Thank you very much. Love to Canada. Best, Rik
We had amazing school meals in the 50/60s all cooked fresh on the premises every day. 😋😋 I loved e everything , even the prunes and custard. We used to have custard pie with pastry base, thin layer of raspberry jam, thick layer of custard topped with a sprinkling of coconut 😋😋 Jam tart with coconut on top. Chocolate sponge pudding with pink custard. I could go on for ever 😂😂 Good video, I'm giving the a go 🙋
Hi Rick, I had a go at this recipe last week, however things didn't go to plan. I tipped the ceramic baking beads into the pastry dish without putting the lining paper in. After I realised what I had done I started removing the beads, but it was a complete failure as the beads just sank into the pastry base and sides, resulting in one rather sticky mess. What a job cleaning everything up afterwards.
In Australia we make Honey Joys (recipe on the cornflakes box) which is basically the cornflakes mixture in patty pan papers. Staple of very kids party ever. I like to fancy them up with slivered almonds and cranberries.
I'm not kidding that I've never been more excited about a recipe than this one. My Pennsylvania Dutch grandma made the best rice pudding ever and I've never seen anyone make it like I remember her doing until now. Thank you for sharing this recipe.
Here in Aotearoa/New Zealand when l was at boarding school 50 years ago, we had a pudding that was only ever known as Boarders' Favourite. It had a base of buttery cornflakes flavoured with cocoa and a touch of cinnamon, a layer of custard and a meringue top. It really, really was our favourite! Sadly it disappeared from the menu and despite much pleading, was never seen again. I'm guessing that when that particular cook left, she must have taken her recipe with her. I've tried so many times over the years to replicate it but, have never even come close. All these years later l still think of it and every time l see a dessert with cornflakes l get so excited, thinking THIS might be the one. This DOES look great and l'll probably make it but, alas, it is not THE Boarders' Favourite. If anyone has ever heard of it or something similar, l would be so grateful if they would share a recipe.
You guys had the best stuff! This looks like kids would go crazy for it. I could see this being a favorite at a diner or cafe over here. I saw your " flapjacks" recipe one time and started making them for my family and they loved them so much they had friends and teachers asking me to make them. I called them Energy bars because Flapjacks here are big puffy pancakes. 😅 Thanks Rik.
Not sure about the best stuff. It was good stuff when we looked back. I love flap jacks - just had a couple of recipe requests _ I will get around to making them. Thanks for sharing. Best, Rik
At my school the cornflake filling was made with toffee that was brittle/hard and chewy... we used to have to bash it with the spoon to break it up - it was delicious and the best version I've ever had.
Really takes me back to my school dinners in the 60s and 70s, they were so good, the one I remember the most and was every kids favourite was the chocolate Rice Krispie squares with a small glass of strawberry milkshake, happy days
Loving your channel & all of your content. The old family recipes are a favourite. Cooking with & for the kids. Happy faces & tummies all round, plus learning some delicious history along the way. Thank you.
We had a cornflake dessert at school in 70’s I remember it had stewed apples on a pastry base with a similar topping to this but with some light creamy topping under the cornflakes, have looked everywhere for that recipe, never found it 💙🏴
Never trust a thin chef, as the saying goes. Love the videos, my family were brought up on these super recipes. Got to find Manchester tart. Our grandchildren tell their mother, "Grandma does really nice meals." that stirs things up! Keep up the good work Captain of cooking.
I'm from NZ. I remember my Grandma making this when we stayed in the school holidays. She used to make the most awesome bread and butter put. Would you be seeing your way to make your way of making it. She used to make the tastiest Queen pudding. Yum.
My kid’s favourite still make it for them now even though they’re adults with kids of their own, Manchester tart is another go to favourite as well, love watching your channel ❤️
Just subscribed. Love your recipes, they remind me of things my late (gone over 55yrs) would make. I am near 70 now and I remember the tarts and custards she made.
Definitely making this gorgeous creation next weekend. I think I would use strawberry jam but a good one from the shop and slacken it off with some lemon juice for tang. When I make homemade raspberry jam in the summer I will of course use that! Thankyou for the idea! I wasn’t lucky enough to have this at my school. We had chocolate or vanilla tray cake covered with thick icing and served with custard. They were also pretty epic to be fair! Just 1 last thing that was way more than a TSP of vanilla but you can be forgiven because you want a custard to be full on with vanilla!
Back in the 1940s and 1950s my mother made a treacle tart which was golden syrup and breadcrumbs. She later on used cornflakes but never did add all the other ingredients.
Yes the old versions used ingredients that were available at the time. Rationing during those war years determined how things were made too. Here is my recipe for the treacle tart ua-cam.com/video/cAeL3-2uLSc/v-deo.html Best, Rik
Last time I saw Cornflake Tart was ~ over 60 years ago! A real blast from the past. High energy food for active children and adults who did physical work outside. Thanks for the memories Rik! Have a couple of real oldtimer suggestions, one from The Depression that very few people still make and would create some curiosity and memories: Tomato Soup Spice Cake (from Campbells) with cream cheese icing, and Chocolate Sauerkraut Cake. Both have interesting histories on how they were created. Don't know if you are familar with either, but despite their weird ingredients they are delicious. These will get some interesting reactions and comments. Not expensive to make either.
Good tip - however if you leave an overhang when blind baking the tart pastry cannot sink below the level of the tin when it bakes. Stick what works for you. Best, Rik
I just subscribed, live in the US. You seem like a delightful person and would be wonderful to know! Thanks for your recipes. British food is some of my favorite. As a child I visited England (in the 1960s) and I will never forget my first taste of Yorkshire pudding. That was it for me! Think I'll go make some scones...... Keep up your wonderful food.
I have never seen this before. Looks sooo nice. Another sweet frìends used to bring to school are the pink rice crispies squares, almost like marshmallows ... My Mom never made these ... thanks Rik

A real blast from the past that, I do not remember the last time I had some, probably school (I am now 61). I recall it as treacle tart with cornflakes inside :)
Best meal I ever had as a school dinner was a homemade minced mutton pie with a side of chips and carrots. With gravy too ofcourse! I didn't even know what mutton was but I loved minced beef pies and just figured it was the same. Really hard to find minced mutton now.
My favourite was mutton & barley, in a lovely thick gravy. Still add barley to many stews & casseroles, wonderful stuff. Used to make a casserole for my child when young chicken thighs, carrot celery etc & barley. I would warn her of the bones & remove them when cooked. We were in the supermarket one day & she shouts, “mammy, can we have bones & barley for dinner”! I was mortified. You should have seen the looks! 😂
Hi Rik. I made this last week in our new Hysapentia. Ive always been so nervous of baking and you made it so easy to follow your recipe. My partner bought the airfryer oven and made the pastry for me and I did the rest am so pleased I did. It tasted delicious and gave me a confidence boost. Thankyou so much. Making your cheese ham and bean pasty tonight 😊
I have made cornflake tart. It's so GOOD ! I remember being at school in Birkenhead and getting a slice from the dinner lady. I put it in my blazer pocket, wrapped it in a napkin and ate it in the playground !
Omg I remember the cornflake tart with loads of custard what absolute heaven. Those were the great days when we had delicious school meals made by awesome cooks, we should have appreciated them ladies more.😘 Unfortunately I can't enjoy it nowadays because I am a diabetic 2 suffer.😢

It wasn't around enough when I was small, this is a nostalgic comfort food. Will give it a go so my little nieces and nephew can try something from the 'olden days'!
I too found myself standing in line on a Friday lunchtime hoping that there was some cornflake tart left by the time I got to the front 😕 memories of school days. Thanks Rick for taking me back in time 😊
This looks extremely delicious Rick! Just my sort of old fashioned pudding, like treacle tart. One of my other favorites that doesn’t seem to be known was I think they called it Danish Apple Cake (or pudding ?) at school - a sort of sponge (not light) with a layer of jam and apples on top all covered over with crisp meringue.
Took me right back to the dinning hall this was my favourite dessert, brilliant!! Definitely making this one. Thank you so much and thank you for a well explained video. I will be viewing your channel for more inspiration
Haha, total blast from the past. Haven’t had this since I was at school, a regular British old school pudding with custard. Thanks for the recipe, and nostalgia
You are my hero! I was just wondering what to do with a box of corn flakes that I had left over! And, I’ve never made a crust before, but you did it the way my dad and grandma did, so I’m going to try making the crust myself! I also have fresh raspberries so I’ll make the jam myself… I’m so excited I can’t wait to taste it! Thank you! 🥰😋🤤
I love the squishing and rubbing part of making pastry. My Mum taught me when I was a kid. Mmm I love custard. We always had Bird's in the cupboard. Thanks for the video. 😊
Brilliant, I’m so pleased YT suggested this to me. We used to have this at school many moons ago and we called it “dead flies” as they always left it in the oven for too long and burnt or scorched the tips of the corn flakes and it ended up looking like a tray of dead flies🤣🤦🏼♀️. I also learnt something new about how to make custard - thank you for that.🥰
It was a case of burnt cornflakes. I’ve never heard of the version with currants - probably a modern version🤣🥰 Do you remember the tapioca (frog spawn)?🤣🤣🤣
We always put an egg I our pastry.. coz I grew up in the 60’s n that was the way! Best way too..make me custard same way too. Add bit of yellow colour if ya want or any colour🤣pure cocoa for chocolate custard is a fave
Our school had chocolate crackle, which was always a top favorite. Basically the same idea, butter, sugar, chocolate powder and cornflakes. This one is a bit more sophisticated 😉
Loved this but my favourite growing up in the Midlands was chocolate concrete with hot custard. Living in Canada it took me years to find the recipe on the dinner ladies website. It’s basically a chocolate shortbread.
Blimey, that takes me back. I used to love it and probably still would if a plateful was put in front of me 😋. I do remember us kids fighting to see who'd get to the front of the queue first though 😁.
I have never heard of or seen that before, and I'm 54 this year. I wish we had it in our schools, in both the counties I grew up in. The only cornflake dessert we had, was chocolate cornflake cakes ❤
I remember In our school it was made very differently here in York, I am in the process of trying to replicate it, when I have I will give you the recipe Rik... Best Neil
Das ist mal eine tolle Idee. Habe ich noch nie gesehen. Werde ich gleich mal ausprobieren. Ich werde ein wenig Mandelspliter mit unter die Cornflakes mischen, das gibt nochmal einen kleinen kick. 😊❤
I would love to see you make some Staffordshire oatcakes. My family came from Stoke on Trent and I thought it would be fun to see how they are made and used for different meal ideas. Enjoying your content. ❤😊

Ha ha ha. Love it. You know barley isnt cooked with as much these days. Best, Rik@@karengray662
Great memories. Thanks for sharing. Best, Rik
That is so good and watching you enjoy your food makes me chuckle especially the sound accompaniment - Yummmmmmmmmmmmmmmm
Thank you 😋Best, Rik
I haven’t thought of this for 40 years! My mum used to make it. And now I need it!
Thank you. Best, Rik
Thank you for sharing. Good Job! Well done. You can do it. Best, Rik
Makes my mouth water 🤤 ❤
Mine too! Best, Rik
I have made cornflake tart. It's so GOOD ! I remember being at school in Birkenhead and getting a slice from the dinner lady. I put it in my blazer pocket, wrapped it in a napkin and ate it in the playground !
Great memories. Best, Rik
I’ve heard of cornflake fried chicken and cornflake candy, but never this. How interesting. Bet it’s tasty.
Cornflakes are a great ingredient to use. Yes very tasty. Best, Rik
I agree, this is a sweet one! Stay with the memories. Thank you. Best, Rik

It wasn't around enough when I was small, this is a nostalgic comfort food. Will give it a go so my little nieces and nephew can try something from the 'olden days'!
Great Idea! Good on you. Best, Rik
I too found myself standing in line on a Friday lunchtime hoping that there was some cornflake tart left by the time I got to the front 😕 memories of school days. Thanks Rick for taking me back in time 😊
You know it was always hard to have seconds - It was like a race to eat and queue. Thank you. Best, Rik
Manchester Tart was always a firm favourite of mIne as a child. Pastry, jam, custard, coconut on top. Really yummy. Xx
On the channel. Best, Rik
another great recipe, thanks for posting
Thank you. Best, Rik
My daughters all time favourite, ill make it next week when shes here for tea 😊 x
Thank you. Best, Rik
Hope you enjoy. Thank You. Best, Rik
Took me right back to the dinning hall this was my favourite dessert, brilliant!! Definitely making this one. Thank you so much and thank you for a well explained video. I will be viewing your channel for more inspiration
You are so welcome! Best, Rik
Haha, total blast from the past. Haven’t had this since I was at school, a regular British old school pudding with custard. Thanks for the recipe, and nostalgia
Thank you. Best, Rik
You are my hero! I was just wondering what to do with a box of corn flakes that I had left over!
And, I’ve never made a crust before, but you did it the way my dad and grandma did, so I’m going to try making the crust myself! I also have fresh raspberries so I’ll make the jam myself…
I’m so excited I can’t wait to taste it! Thank you! 🥰😋🤤
Janet, you have made my day! Well done you - I hope you enjoy making it - you can do it! Best, Rik
This was one of my absolute favs at school 😊
Never heard of this and now can’t wait to try!
friday, school dinner treat. And what a great video.
Yay! Thank you! Best, Rik
I could almost taste that. Will definitely be having a go at that one 👍👍
Hope you enjoy it. Best, Rik
Oh yea, another project, and a saver video. Thanks Rik
Watch the waistline. Best, Rik
Thank you for making this ❤
No problem 😊 I have had many requests I had to. Hope you enjoy it. Best, Rik
Wow! That looks so beautiful and yummy!😊
Thank you 😋Its a blast from the past, very tasty. Best, Rik
I love the squishing and rubbing part of making pastry. My Mum taught me when I was a kid. Mmm I love custard. We always had Bird's in the cupboard. Thanks for the video. 😊
Glad you enjoyed it. Best, Rik
Had this at school.Takes me back
Good memories, Tom. Best, Rik
Just absolutely my favourite at school
Yes, I enjoyed it all those years ago. A tad sweet these days. Best, Rik
I also learnt something new about how to make custard - thank you for that.🥰
Thank you for sharing. Was it burnt cornflakes or did they have a currants in? I remember currants at one stage. Best, Rik
It was a case of burnt cornflakes. I’ve never heard of the version with currants - probably a modern version🤣🥰
Do you remember the tapioca (frog spawn)?🤣🤣🤣
Yes, ha ha ha Best, Rik@@Richiedei50
We always put an egg I our pastry.. coz I grew up in the 60’s n that was the way! Best way too..make me custard same way too. Add bit of yellow colour if ya want or any colour🤣pure cocoa for chocolate custard is a fave
Yes, I agree. Best, Rik
Ive never heard of it before but it looks delicious. Excellent commentary thanks
Hope you enjoy, thank you. Best, Rik
My childhood Favorite 😋
I will definitely making this and equally enjoying it as much as the chef 😁
Hope you enjoy it as much as I did. Best, Rik
Our school had chocolate crackle, which was always a top favorite. Basically the same idea, butter, sugar, chocolate powder and cornflakes. This one is a bit more sophisticated 😉
Thank You. Best, Rik
Haha! I had forgotten about this old favourite. Thank you.
You're welcome! Best, Rik
Hi Rik, looks lovely, but I don't remember ever having it. I do remember Gypsy Tart, which I loved. I would love to see how to make that please.❤
I have just made a video which will be edited shortly - Gypsy tart, caramel tart and some know it as butterscotch tart. Best, Rik
@@BackyardChef That's great. Thanks very much Rik.
Omg even the custard looks SPOT ON
Thank you. Best, Rik
Loved this but my favourite growing up in the Midlands was chocolate concrete with hot custard. Living in Canada it took me years to find the recipe on the dinner ladies website. It’s basically a chocolate shortbread.
Sounds great! Thank you. Best, Rik
Blimey, that takes me back. I used to love it and probably still would if a plateful was put in front of me 😋. I do remember us kids fighting to see who'd get to the front of the queue first though 😁.
Occasionally now I'm old. Best, Rik
I have never heard of or seen that before, and I'm 54 this year. I wish we had it in our schools, in both the counties I grew up in. The only cornflake dessert we had, was chocolate cornflake cakes ❤
I love cornflake cakes! Hope you have chance to try this. Best, Rik
I'd forgotten about this. Thank you. Cornflakes are good for you. Best with plain pastry. And Birds Eye custard. Royal. 😊🎵
Birds custard, not Birds Eye. Water thin.
Oh yes! Birds custard is at least yellow in colour. Best, Rik
I remember In our school it was made very differently here in York, I am in the process of trying to replicate it, when I have I will give you the recipe Rik...
Best
Neil
Cheers, Neil. Love trying recipes. Best, Rik
Freu mich schon drauf.
I was laughing out loud with the taste testing “oh, oh, oh, oh” 🤣🤣❣️Gonna make this one!!
Thank you. It's a sweet one. Best, Rik
OMG - I can’t wait!! You make it sound sooo good. 😊🥧🌷🌱

I would love to see you make some Staffordshire oatcakes. My family came from Stoke on Trent and I thought it would be fun to see how they are made and used for different meal ideas. Enjoying your content. ❤😊
Great idea! Best, Rik
At school we also had a butterscotch tart which was another fave of mine. I’ve looked everywhere for a recipe but no luck.
Yes, another sweet dish. Also known as caramel tart if I remember correctly. Best, Rik
Nearly 50 years since I had that and had forgotten all about it. Guess what I'm making to go with Sunday dinner.
Yes its a classic we all remember, Its a sweet one. I think that is because we are older too!. Thanks you. Best, Rik
Oh i remember that, it was my favorite. Next was the custard tart that had jam on the bottom. Oooh.
Ooooh Yes! Thanks for sharing. Best, Rik
I've never even heard of this, but it sounds like fancier Rice Krispy treats. Must try!
Hope you give it a go. Best, Rik
