OKRA - CANNING for FRYING LATER (OAG 2015)

  • This video is about how to can, in glass jars, okra for frying later.
    No hot water bath nor pressure canner required.
    Recipe:
    4 tbsp apple cider vinegar
    3/4 tbsp salt
    3 1/2 cups water
    2 quarts cut okra
    This is a single recipe, multiply it depending on how much okra you are canning
    I make more of the liquid than is called for because I don’t want to run short of liquid to fill the jars.

    I love how he put a recipe for a single use on here! I’m a small, backyard gardener and it’s difficult sometimes for me to figure out how to cut the recipes down into single pint or quart recipes

    Sir! Thank you so much for this video. I followed this recipe a few months back using the okra from my garden this summer. Today I open my first jar and cooked okra to go with our New Year meal. When I tell you it was delicious believe that!. I am new at gardening, even newer at canning, but an expert at eating okra. It tasted as if I’d harvested today. I may never freeze okra again! You sir are my hero today. Again thank you for sharing your knowledge of gardening and canning and your wisdom. I am so happy today. I have been a subscriber to your channel for only a short time but I’ve learned so much. I spent a good part of the day viewing your older videos to see what else I can glean from you.     So glad I found this channel! I'm going to try that today! We planted late this year and my okra is just now coming on. Was glad to see him use this method of canning. I've canned bacon grease similar to this. I fill up a jar with bacon grease and place in microwave for 3 minutes, take jar out and wipe rim and put hot lid on and set aside to cool and seal. So far I haven't had any issues with doing it that way. Thanks again for sharing this knowledge! God bless this man's family!

    I was skeptical about putting okra in liquid and then frying it later. However, the canned okra was much better than the frozen okra! I'm so glad I found you. Thank you for posting.

    I canned this about a month ago and fried it up today. It was perfect! Better than frozen or even fresh fried okra. I think the ACV brings out the flavor of the okra. Now I need to find more okra to can and get me through the winter. Thanks so much for sharing your wisdom.

    I live in south Alabama and never knew you could can okra for frying! I just did 3 pints! I would definitely suggest making more of the liquid. I ran out on jar #2. Thanks so much for this information. I can't wait to try my first batch! ☺

    I just canned 8 pints tonight and had enough left over for probably 2 more pints but I ran out of jars. I can't wait to share these with my family! I've only ever canned tomato juice before, so I was pretty proud to hear those jars "pop" and seal! YAY!!! Thank you!

    Some great tips in this video. I learned a lot. Looking forward to your video on breading and frying it!
    Couldn't help but notice your Saladmaster cooking pot. We bought our Saladmaster set nearly 40 years ago (when we really couldn't afford it!) and it has been great. We actually toook them up on their lifetime guarantee when one of the skillet handles broke. They sent us a new one, no questions asked. Great cookware!

      Good for you. I have some that was canned 4 years ago and it is still good, although, I do recommend rotating your canned goods. Some people have asked me if older and tougher okra can be canned this way, and I tell them no, okra that is past quality will not be improved by canning this way.

    I tried you recipe and canned about 5 pint jars the very first time, a month later I decided to fry up a jar for a taste test before I canned anymore okra for frying. I watched your video on how to fry up this okra after it was canned. I loved it. I will never freeze okra again. I used your liquid recipe to can my whole okra for boiling. I tried a pint jar and it was delicious. I eat the whole jar, the apple cider vinegar cut down on the slime. I watch your channel everyday now.     This is exactly how I can my okra for frying. I think it is an old recipe as a good friend who was my mother's age gave me this recipe. I dehydrate okra and vacuum pack it in Mason jars to use in soups over the winter, but this recipe makes the best frying okra. We love okra.

      You will love okra this way. I like it better than fresh okra fried. The vinegar gives it just a little "twang" and it is good. If you decide to can some this way, you probably should do it in pints (I did it in half pints) because while I was frying it I was snacking on it ad when I got it all fried, half of it I had eaten.

    I needed an idea for canning two gallon zip lock bags of okra. I had no idea it could be canned for frying like you did it. Yours is the first video that came up on the search; I needed to look no further. And that is what I like about your video.

      @@bettye444 You don't need to wait weeks to try it. If you want to try it so you will know if you want to can more, then wait a couple days and open a jar. After a couple days it will be the same as it will be in a couple years. Let me know how you like it.

    Sir, this the first thing I've ever canned. We only have 4 plants, and over a week I was able to get enough for a 16 oz. jar. (I just heard the lid pop) Once that Okra hit the vinegar/salt/water mix, the smell was absolutely outstanding! I think I'll freeze fresh until I get enough for a couple jars. You've inspired me to learn how you did the chicken and the vegetables! Thanks so much!

      kent: Freezing okra will probably turn it to mush, but you can try it.

      I know this is an old comment but I dehydrated some frozen okra and it taste great. Cut them up like you would for frying and season them with what you like and dehydrate for about 8-10 hours.

    Sorry I did not find your channel and this recipe earlier. My wife and I love fried okra but when the okra starts to come in you get a lot in a very short period of time, more than you have space to freeze, and more than you can give to neighbors. This method of preserving solves that problem. I have just subscribed to your channel. We live in Western Kentucky but are glad to learn something new from an Alabama gardener. Hope you are doing well.

    Prefer Fresh ..
    Did any of u knew okra is consider. A power food .
    Is antioxidant . Anti cancer .also properties that are Alzeih and Pakiston prevrntive and quite other good properties .
    Theres several types of Okra
    Some grows 3 feet tall and some up to 8 ft tall .

    Mrs. Wanda, I tried your canning method with some pretty large okra. I let it sit for about a week. Today I picked some very small tender okra and fried up both. Oh My Goodness! The canned okra was much tastier and held the batter better than the fresh! Thank you for this lesson!

    I truly enjoy your videos my wife and I are 60 years old maintaining out of her own garden for many years. We used to can are vegetables this way but we were told you can't do it that way you will get botulism is that possible canning this way. You don't have to ask me to subscribe because I will and hit the notification thank you very much for all your information

      Wouldn’t do any vegetable without using ACV as that is almost like pickling them. I think the vinegar is the key. That and salt. All other veggies must be canned as other low acid veggies.

      OldAlabamaGardener I tried it last night. I had measured out 5 pints of cut up okra so I made one and a half times the brine. The okra loses a little bit of volume in releasing bubbles, mucilage and as it partly cooks, apparently, and I ended up with four full jars and about ten pieces left over. You KNOW I had to eat the leftover pieces. They were so delicious with the right amount of crisp and a little tang from the vinegar!

      @@sqwrrl Carlota, you don't need to wait months to try the canned okra. How it tastes today, is how it will taste months from now. So, open a jar, fry it up and see how you like it, then go can some more. Keep watching, more to come!

    Hi OAG! I'm glad that you commented on Misty Prepper's channel.
    I quit using a freezer this past summer when mine died. I now can everything that I used to freeze and was not looking forward to not having fried okra except when I picked it. I have wondered how my grammaw canned okra for frying, now I know. I'll be doing this when the okra comes in this summer.

    Boy!! it sure took them little boogers long enough to seal!!! I was thankin' God and praisin' Jesus with every ping!! I got 5 pints and one pint and a half out of my first batch of okra, and have another stewer full to do tomorrow........not enough hours in the day! I hope you're still doin' well, OAG, it's been a while since you posted this video......I worry about stuff like that.......God bless you!

      OldAlabamaGardener Watched your video and was thrilled to see a video for okra. I made 5 quarts so far. Took a while to seal, and as they cooled have now turned grayish white for the liquid. Is that ok? I thought the salt and vinegar mixture would keep the liquid clear. What did I do wrong?

    Mr. Charles, I heard you mention this video on Danny's live feed from the conference so I had to come and watch it right away. Okra is my favorite vegetable but freezing was just awful. I never thought it would be suitable for frying if it were canned so I never tried. (I don't eat it boiled. Eww!) I will definitely be trying your recipe this year! Thank you for sharing all your knowledge with us. Praying for a safe trip home from the conference for you.

      It’s really good boiled if you just boil to hot. Don’t overcook that is what makes it slimy. We love it just wash the whole pod dry coat with olive oil and bake till hot yummy!

      I love this okra. My okra is slowing down now. Can I cut okra today, save it in the fridge, cut again in a few days so I will have more and then process as you suggest??

      Robert, yes you can cut okra, put in a zip loc bag, store it in the refrigerator for probably 3 days. And, yes, that is the way to gain enough to make it worthwhile to do a canning process.

      No, I would not do this way with whole okra. The liquid must get inside to throughly saturate every part of the okra and I don't think it would do it if the okra was whole. I appreciate you watching my videos. Be sure you are subscribed.
