SQUASH - CANNING FOR FRYING LATER [BEST TIPS] (OAG 2016)

  • ************ EXACT RECIPE IS HERE *************
    1 QUART OF CUT SQUASH
    4 TABLESPOONS APPLE CIDER VINEGAR (AVC) VINEGAR
    1 1/2 TABLESPOON CANNING SALT
    7 CUPS WATER
    BRING THE WATER, VINEGAR, SALT TO A BOIL (do not put the squash in at this point)
    AFTER THE WATER IS BOILING, ADD THE CUT SQUASH AND BRING IT BACK TO A BOIL, BOIL FOR 10 MINUTES.
    AFTER 10 MINUTES DIP THE SQUASH AND PUT IT INTO THE JARS, FILL THE JARS WITH THE BOILING WATER, SALT AND VINEGAR MIXTURE. BE SURE THE MIXTURE COVERS THE SQUASH IN THE JAR (don't put too much squash in the jar)
    FILL THE JAR WITH THE MIXTURE UP TO 1/4 INCH FROM THE RIM.
    WIPE THE RIM AND PUT A HOT LID ON AND SCREW THE RING DOWN TIGHT.
    TURN THE JAR UPSIDE DOWN UNTIL IT COOLS AND THE LID IS SEALED.
    ONCE THE JAR IS COOLED, REMOVE THE RING
    DO NOT PRESSURE CAN OR HOT WATER BATH!

      Did any of your squash at the top of the jars go white??? All of mine have some in them that have turned white along the edges , the ones exposed to air. I'm thinking I did something wrong....

      @@MadebyMe3 no I still have some that I canned 2 years back and they look just as good as if I did them today. It’s trial and error I would give it a go again.

    It’s 2020 and I’ve canned okra using oag recipe and it’s the best I’ve tasted now I’m trying this too. I’m new to canning so it’s such a Blessing to be able to learn from a true person. God Bless You OAG

    Last year, I canned squash this way. I am happy to report that a year later I pulled out the last jar, it tasted so good. The squash was still firm for pan frying.

    It’s so good to know how a long time gardener does things and is willing to share. I’m 74 and don’t have a garden because we live in a very wooded area. My shopping is done at the farmers market or the produce section at my store depending on the price and quality. I am looking forward to trying your recipe. Thank you I enjoy your channel.

      Recently I have received questions about their canned squash turning white. I tell them to make sure the squash is covered by the liquid. *_I suggest filling the jar to only at the bottom of the shoulder._* Then make sure the liquid covers the squash pieces.

      +OldAlabamaGardener I went through okra canning video, the egg on the counter has a very long life (June 26, 2015 to July 4th 2016) I love both videos, love okra but can't grow here in zone 4B. Not enough heat wave.

    This is really amazing to me that this can be done. EVERYTHING I read or watch says you cannot can squash or zucchini. Even the Ball Blue book says not to. I am so happy I came across this video.
    Can you do this with Zucchini also????
    I have been freezing and dehydrating mine because I thought this couldn't be done.

      Melanie: I have not tried this with Zucchini so I don't have first hand experience with it. But, I believe it will work. Have you tried it with the okra? I always want you to be safe when canning.

      Hello Celie and welcome to my channel! I always want you to be safe so here is my best thoughts on this. The first and best way to determine if the squash is safe to eat is: If the lid is not, not sealed, then you would certainly want to dispose of it in the carry out trash. I wouldn't even put it through a sink disposal. Botulism is our concern here and you can not smell botulism. You might see some mold but you can't rely solely on that. A sealed lid is the best insurance that the squash is still good. Thank you for subscribing and thank you for asking this question.     I was recommended to look for your canning videos by a canning page on Facebook, as the best squash and okra canner. Thank you for so much useful information on all things. One question though, I didn't see you passing the jars in a pressure cooker, is that correct? It makes squash so soggy, but I'd like to be sure, please?

      That is correct. Don't pressure can, as it will turn the squash to mush and the okra soggy. The vinegar and salt is what will preserve the contents as long as the lid stays sealed. Do it right.

    Thank you for sharing. I am going to can some like this if mine does anything out in the X chicken pen. I uploaded a vid of it today. It's looking pretty good even WITH all this rain we're getting. I love yellow squash!!! nom nom nom you had my mouth watering! lol I like the single layer one. Does this amount of liquid make 4 pints?

      I just tried this a couple of weeks ago an they turned out great but I was looking at them today an noticed some at the top in the jars are turning white.... Is this normal? Have you had this happen? The ones submerged in the liquid are not just the ones exposed to any of the air in the jars. They sealed beautifully so no issue there. Any advice? Many thanks in advance.

      @@MadebyMe3 I am not clear on your question, but it is important to not fill the jar too full of the squash, the squash should be well under the water.

      @@OldAlabamaGardener I was thinking perhaps that's what I had done , is filled them to full and now they are going bad. The squash at the top of the jar are turning white , the ones caught in the head space , but not the ones in the liquid. So I guess I'll dump all 8 quarts an start over when I pick my next batch....     Does the squash taste vinegary? Just found your channel and am really enjoying your knowledge. We live in Somerville about 45 minutes south of you. Planting a garden this year for the first time in several years. If you do another seminar I would love to go.

I live at the north end of Alabama, with in one mile of the TN line and you are across the river. With the Corona virus I don't know if or when, I would be allowed to hold another class.     Thanks! It really looks good. I should have my first summer squash this week. Never tried this. I slice, blanch, vacuum pack and freeze summer squash. It turns squishy when unfrozen though.

      Yes, that is the problem with freezing squash, when thawed it turns to mush. That is why I went into detail about the texture of my canned squash. Canning squash this way is the same process as my canning okra for frying later. Now I am think why not green tomato slices for frying later, but I haven't tried it yet.

      Hello Carla. As to your question about canning other vegetables that way. I think I better give you the book answer first: As you know, the authority on canning is the Ball Blue Book on Canning. However, it does not give instructions on canning this way. And since it doesn't give instructions for this, then that also means they don't approve it. Now, my answer: I first started canning Okra this way and wondered if I could also can other vegetables the same way, so I tried squash and it worked out the same as the okra. But you notice that with the squash, I did cut it rather thin. My concern with broccoli, cauliflower, celery, and onions is: If the vegetable is thick, it will be difficult to get the vinegar/salt solution to penetrate to the inner parts of the vegetables. Now, going back to okra, notice that I do not can the okra whole, for the same concern I just stated. Now, I do can green beans (snap beans) using a vinegar solution, my family has canned green beans this way for a 100 years. You can watch me do that at: ua-cam.com/video/uC2zAQPOfHk/v-deo.html

      Hi Debbie, I have canned potatoes but only in a vegetable and beef cubes mixture. I cube my potatoes, hold them under water until I get the rest of the vegetables ready, put them in the jar, fill the jar with either water or chicken stock and pressure can the as instructed by the Ball Bluebook on canning. I just checked, I don't have a video on it. Thanks for the question. Perhaps when I have time I'll make a video on how I do it.

    Mr. Charles, when you add liquid to the jars are you using the liquid you boiled the squash in or just plain boiling water? I can okra like my mother and granny did, using a similar "brine" and use the boiling liquid to add to the jars before sealing. When I open a jar to fry the okra, I empty it into a colander and gently rinse with cold water, drain it and dredge the okra in cornmeal and flour. After frying I sprinkle a little Creole seasoning over all. Delicious!

    preserving squash: I slice it, put into a vegetable steamer for 3-5 minutes
    drain it on a towel, put on trays to freeze and 2nd day I transfer the frozen pieces into bags: the squash is exceptional for any final preparation ... fried, bread, muffins, hot dishes, : it is a no fail method that works.

    Last year my squash did great and I loved canning it this way. This year, I have a problem the top layer of the yellow squash is turning white. I just did it this week. It isn't mold or anything like that, it's like the color is fading out of the squash. What happened? I don't remember if I used white or ACV last year. but could it be I should have used white vinegar instead of ACV?

      Did you have enough liquid in the jar to cover the squash? In most cases, the liquid should cover the contents.

    I had know idea you could can veggies w/o a canner. Do you use a hot jar to start with when you are putting the veggies and hot water in the jar? I have watched many of your videos. I live in Alabama and I grew up on the same cooking that you eat but only recently started gardening and preserving. Thank you for your videos.

      Karen, That is correct, no water bath or pressure canning. Yes, they will stay on the shelf for at least 2 to 3 years. Yes, I think the vinegar does somewhat of a pickling process, other wise they would spoil. Did you look at my video on canning okra for frying later?

    Hell OAG, I have a very very important question!! I have 1 gallon packed tight. it has worked down to the bottom of the jar. The problem is I did this in 5 one gallon jars in 1993, yes I said 1993. they have been completely sealed, never opened. Are they too bad now? Should I find a way to dispose of them? I was also wondering if I could pour some of it around my gardens to ward off ground Hogs. I have whole families living here and adjoining neighbor property too. They have eaten almost everything. I am to the point that I should level it all and call it quit. Please, your advice would be greatly appreciated. I love your videos I have told you before because you are so good.       Don't you have any dogs? Ground hogs live all around out here in the country, but they don't bother around my garden/property...but then I've got 2..neh, now 3 dogs. :)
