    We are Steve & Steph (StevenSteph™)! We can't be boxed in by labeling what this channel "is"! It's like Seinfeld....this is a channel about nothing! LOL
    If we must...in a nutshell we are a couple of weirdos and we looooove having fun doing anything and everything that entertains us! Usually it involves having a good laugh about something!     By the way, since you all want to know...we have been married since 2001 and we live in Southern California. We've got 3 amazing grown kids and 5 absolutely adorable grandkids.

    NOTE: for all who haven’t heard me complain about my regular oven…My wall oven is broken…LOL it needs to be replaced. It varies by 50 degrees sometimes! 🙈🙈🙈 it happened when we reconfigured the kitchen layout and it was still fairly new but it has never worked properly since 😭. I’ve had a repair guy come out and he ended up changing the thermostat…but it didn’t change anything and he couldn’t figure out why and I didn’t want to pay for another guy to come out and pay for parts and his time again for nothing. So I use the toaster oven for anything important that needs a reliable temperature (baking) 😆

      Yea I believe that it would have. Worked better in the regular oven. Maybe if you only use half of the mixture in the toaster oven it might work better

      When it cooks hotter on one side, rotate the pan and see if it cooks the other side, too.

      Your little Toaster oven is cooking uneven,so just turn the pan around and cook for an additional 10 mins or so. You also have to add time because you opened the oven door 3 or 4 times letting out heat. Maybe try it again and let it cook for close to 30 mins in the Toaster oven. Or try it in a round pan and put it in your air fryer. Worth a try. Never know.

      Every time you open the oven door it loses your heat. Next time cook for at least 30-35 mins. Before you open the door and see if that helps. Nothing cooks that thick in 20 mins.. it may even take 45 mins. Or longer.

    Steph it’s best to put the egg whites into the chicken mixture and don’t over stir the mixture just fold in the egg whites so they don’t deflate. Makes a better loaf. 😊

    Ketogenic woman makes carnivore muffins and bread and bagels. Also, if you want to watch cook with Mel, she does a lot with chicken flour, which I made my own.

      Awesome thank you! We aren’t doing any dairy (or spices) with our version so I’m finding all the fun recipes have cheese and cream and cream cheese and stuff 😆

      ​@@StevenSteph ... the Ketogenic Woman carnivore waffles are only 4 eggs, 1 cup ground pork rinds ( I grind my own in the food processor and store in a plastic container) - 2 tablespoons melted butter and a dash of Redmond's salt.... Cook in a mini waffle maker... SO EASY and delicious for a bacon and egg sandwich... sometimes I'll have one with full fat cream cheese spread on top ... I wrap them individually and freeze in a Ziploc bag and reheat in the air fryer 😋

    Cream of tartar is a white powder made from tartaric acid, a natural byproduct of winemaking. It's also known as potassium bitartrate or potassium hydrogen tartrate

    Potassium bitartrate, also known as potassium hydrogen tartrate, with formula KC₄H₅O₆, is a byproduct of winemaking. In cooking, it is known as cream of tartar. It is processed from the potassium acid salt of tartaric acid. The resulting powder can be used in baking or as a cleaning solution.

    Hey Steph !! 👋 ... Here's an idea for you to try 😉 ... Since your wall oven doesn't work, you can put your " chicken bread " batter/ mixture into a bacon greased cast iron skillet and put it out on the grill , and cook ("bake") it out there !! 😊 ... Enjoy ! 👍🤗

    Just learned of cottage cheese bread n now blown away. Hats off to all the chefs in the world!!! I do love how they keep it real by saving the bread and toasting it. Ps tarter you can have n use. All it does is help stiffen the whites then makes the fluff more stabilized.

    When I did eat meat years ago chicken was my favorite. This looks like a great recipe for people who are on this diet. Well done Steph!
    I have a suggestion: if one side is done turn it around to the other side it will get done that way! ⭐️⭐️⭐️⭐️⭐️💜

    If I try that, I'm making it like pancakes. I kinda make my chicken stripes like that. But pork rind panko on the out side. 😊😊

    I looked it up online and they baked it for 50-60 mins and then let cool for 30 mins. Plus they used a blender to mix the meat with the whites.

God love ya Stevie. 🙏🏻💖😂 Oh I’m not sure if someone said already but, turn your loaf pan upside down then put the parchment over it to mold it to the pan, then turn over and slide it right in.     I may try this because cornbread really spikes my blood sugar bad, but I love it so much. Thanks for showing us. I used to make cornbread fried in a skillet on the stove. It tastes better than baking it and because there's more surface area it doesn't take as long as baking it. I judge it's doneness kind of like when you're making a pancake. You might try it that way. 😊

    Well alrighty, then. Kinda surprised at the ingredients. Love corn bread, so I think I might try this one and experiment a little. This whole diet is incredibly interesting. Hey, Puddy girl. I wonder what she thinks about the meaty smells. 😊❤

    Glad that you thought of the thermometer, I wouldn't have thought of that. Regular bread is 350 for 25 minutes, and I don't think that flour is as dense as chicken

    I have my chicken bread in the oven. I used a 6x9 glass bake dish.
    I did used my hand mixer,on low, to combine meat mixture and egg whites. 350 for 1 hour. Just took it out of oven, looks real good.

    I mix melted beef tallow & melted butter together and use for the fat I need, tastes great on my steak and scrambled eggs

    Loaf pan should work good but use your wall oven to bake toaster oven doesn’t give even heat

    There are recipes on youtube from other carnivores for different "meat breads" using the meat flours from carnivore crisps. Just a thought, since you have some of the flour anyway. However, I like the thought of using the ground chicken or turkey because that would be substantially cheaper than the meat flours.

    Meat leaves water when it start to cook so may be reduce the meat portion.or use flat oven dish as you said

    I googled a carnivore chicken-bread and found a really easy recepie, and it was yum! It had garlicpowder in it to neutrilize the chicken flawor, and it did😲😁 the grounded chicken were to be cooked before making the bread.

    put your mixture on a baking sheet to cook it it might help ???

    You gently fold your chicken mix a bit at a time until incorporated into the beaten egg whites, then gently fold in the panko - not all of it at once. Your whites will deflate completely if you mix everything together and stir like it is cake batter. Don't ever use a mixer to mix anything into beaten egg whites either.

    Maybe you could try making them in a muffin tin instead of a loaf pan.

    Sorry about your stove issue!! I went through the same thing a couple of. years ago. PITA. Turn your pan around in the toaster oven: maybe the heat is stronger on one side. I made this bread in March: it was good with butter (and made me want raspberry jam). But, it never got tall enough for a real sandwich...if we need it, it's good to know it's there.

    Whenever I make a meatloaf, I cook it for 1 hour; and it sets up and slices easily.

    I know sometimes my toaster oven cooks unevenly on different sides so maybe next time after it's been in there for a while turn the loaf pan around so that it can change directions. So the other side will be on the cooking side if you know what I mean

    I looked it up and it said Cream of Tarter is a by product of the wine making fermentation process.

      Shoot for an hour I’ve made it since! Also use a blender to mix the raw chicken and yolks and that helped!

    I think you didn't cook it long enough to start with... think meat loaf.... it takes longer for that much... Like 35-45 minutes.

    It's interesting that this carnivore bread tastes like cornbread. I wonder if you put it into a pizza pan next time, then it would bake like a crust? Just a thought.
    I want to let you know I talked to my doctor today and that I had considered going on the carnivore diet but after talking with my sister who has been on the plant based diet for several years, I decided to stay on the plant based diet. He said he has had several patients on the carnivore diet, so he has read up on it. He said it can cause weight loss and lower blood glucose, which were the 2 things I was considering. But his concern was with an increased risk of developing heart disease because it prioritizes foods that are high in saturated fat, such as fatty steaks, which can elevate cholesterol levels especially the LDL. My cholesterol levels have been elevated in the last few years. Also, red meat is associated with an increased risk of cancer, such as colon cancer and pancreatic cancer. I'm sure you and Steve have read up on this and understand the risks. With my health, I'm not willing to take this kind of risk, because there is heart disease and cancer in the family history.

    I wonder if it would help if you mush up the chicken more so it isn't the stringy things (I refuse to call them the "w" word. 😂) Maybe it needs to be more fully combined and that would help?

    I googled it said to bake 50-60 minutes at 375

    Disclaimer: Don't rely on me for any baking advice, even though I watched my dad bake in his bakery for decades and I don't bake anything that doesn't come in a box.
    But! During Covid times I began to bake various things in loaf pans, and after hating the Teflon-like pans and grease-slathered non-Teflon pans, I discovered parchment loaf pan liners. Quick 'n' easy. 🙂

    I think it needs to cook for around an hour to be more 'bread' like and less sloppy

    You didnt cook it long enough and should have mixed chicken in with panko in a blender or foor processor.

    Next time try to fold portions of your egg whites into the chicken and just fold it all in. That will help you keep the volume in your egg white stiff peaks.

    Have you tried air frying frozen steaks (meat)? I take mine out of freezer butter and salt them and put in airfyer.

    If you baked it longer in the loaf pan for over an hour to more it probably would have worked

    Did you cook the chicken beforehand? All the other recipes I have seen said to cook the chicken meat and cool it before adding to egg whites.
