Mount Pleasant, MI... Kale and chickpea salad with apples and walnuts. Seasoned with garlic, onion and cinnamon. Dress it with avocado oil, maple syrup, ACV, Aminos and Sriracha.

Rice and Beans is such a comfort meal for me, I’m Half Dominican and was raised by my Guatemalan mom in Boston where we still are, and she cooks the best rice and beans. I usually tend to have more beans and less rice and a vegetable side now. I’m a new follower and this is my new favorite channel for Plant based recipes ❤️🙏🏼

In Brazil we traditionally cook rice ALWAYS frying some garlic before adding the rice and cooking it together a little bit before we add the water and let it cook through! Some people also fry onions with it :) there's no such thing as just throwing it in boiling water, that is a crime! 😅. 🌹love your recipes!!!

My local Asian market sells jars of pre-fried freeze-dried garlic. So useful in a hurry! I even mix it 50/50 with toasted sesame seeds in a shaker jar to sprinkle on soups and such.

Idk how or why UA-cam recommended your page… but I’m glad they did. Also, I love my rice like this. I eat it as is and my family swears I’m crazy and that I need meat with it. I’m not vegan or vegetarian but I don’t always need or want meat.

Very nice "sides"!! I do a side which my niece's vegan boyfriend loves. Chop up a large onion roughly and gently caramelize. Layer uncooked squash in 0.5 inches slices over the base of a lasagne dish. Chop up two sweet red peppers, one clove of garlic, and one small yellow bell pepper. Mix. Layer onion then pepper mix over the squash. Sprinkle edamame beans freely on top. Cover in a large jar of chilli based pasta sauce (or use your own homemade!). Cover with foil and bake gently in the oven. You can also do a 50/50 of edamame beans and tofu.

I love watching your videos! I always start my rice by sauté in oil, except for Jasmine Rice, which I recently made for the first time! I never made Jamaican style peas and rice, (Scott bonnet, coconut milk) but I will be trying it. I will also try using Basmati Rice, which I may have tasted when eating out? I lurk and listen a lot here.....but slowly I am incorporating more of these foods into our diet. I'm trying to find the right balance of healthy grains/lentils/legumes and greens, both cooked and raw throughout the entire day. Basically, I need to relearn how to eat!
Im a East Texan with real Louisiana roots..we use jasmine rice with pigeon peas and habanera peppers ..lol..I literally panic when I saw that halved scotch bonnet pepper and my hubby is a St. Lucian okay..

Thank you for recognizing that coconut allergies exist - my niece is so allergic that we all make sure to avoid all forms of coconut - Epi pens and emergency room visits are very expensive.

Brazilian here, about the rice, the whole saute onions and garlic before adding water it's kinda the default way to cook rice around here.

I've never heard of brown basmati rice (maybe I should watch again, may have just invented that subconsciously). I'm hoping some of ur cookware might be n the descriptions - I like that pan! I've decided to subscribe b/c I love ur knife skills & that u make cooking look simple & so much easier. Good to see u again ~ I used to watch the taste tests.
From Florida and I can eat rice peas by itself. But I have to say pasta and sauce or butter does me just fine in a pinch. Or cucumber tea sandwiches got try it before u knock it. My grandmother use to swap with black eye peas and pigeon peas. She would put the scallion on top of the rice with the scotch bonnet just before covering the rice.
We're from Massachusetts and side dishes or main dish is often potato,,,so many ways to prepare. 👍

As soon as I saw the thyme n coconut milk I knew the recipe... the second one seems like it might be good with a bunch of caramelized onion rings and squeeze some lemon at the end.
Question: do you think juniper berries would work with that first rice? Just thinking I know I have some of those. Not sure I have allspice berries at the moment.

I’m plain ol’ American but I grew up with nothing but West Indians and Latinos. This recipe was very familiar. I also usually use the pigeon and red beans kind of interchangeably. I also have eaten it as a meal. Sides are kind of what led me to the plant based lifestyle. At thanksgiving I would only want the sides. I’d push my obligatory piece of turkey around the plate and sneak it to my dog when nobody was looking.

I'll definitely try this recipe but bruh, I'm from Jamaica (born and bred) and I ain't never seen rice and peas done this way. You'll know if you got it right of the rice has a pinkish look.

Hey really sorry but I haven't tried this recipe in one to offer that suggestion. I usually use pots and pans on the stove since most people have that on hand.
@@thenarddogcooks Thanks for replying anyways, I was thinking of frying the peppers and beans like you have in the beginning and pouring it with the coconut milk and rice in the rice cooker at the end. But I'll try both ways and reply again if I find using a rice cooker gives considerably better results
