Cotton Sponge Cake
5 medium eggs (weighs 57 to 60 gr. each with shells)
1/4 teaspoon salt
65 grams whole milk (warm milk)
10 grams instant coffee
50 grams oil
1 teaspoon vanilla essence
100 grams plain flour / all purpose flour
100 grams fine sugar
Pan size: 18cm
Baking temperature: 140°C
Baking time: 60 minutes
After 60 mins, increase the temperature to 150°C and continue baking for another 5 to 10 minutes, or until the top of the cake is golden brown.
Baking time may vary depending on the type and accuracy of your oven.
I know that there are a lot of people asking for background music... But the sounds of the kitchen are beautiful too. Great recipe. 😊

I was watching a video of a lady baking some kind of dessert, and the same song played repeatedly, over and over, like 6-7 times, and it was annoying, lol!

I had baked for full big cakes & also cupcakes for quite lot of times,they taste great with strong aroma of coffee,but i think it depends on the coffee powder you are using too,i use nescafe classic.
I made this cake, was very easy and turned out so well. My family love the texture and I will be using this recipe for other flavours. Thank you for sharing!

I tried this cake without water bath style and directly baked on oven at 170 degrees, about 45 minutes. It came out just as wonderfully. Very soft and was easy to make. Instructions were very clear. It's not too sweet nor too bland, just right amount of sweetness. I love it! Will definitely use this recipe again. Thank you for sharing!

Thank you. This was my brother's favorite cake, and Mom made often it for his birthday. Sadly she now has dementia and lost the recipe, and my brother passed in April. His birthday is in 5 days. I will make it then.

You followed the exact step or you use hand mixture for all the steps??
I tried this yesterday and it came out perfect. I used warm cream instead of milk and a tube cake mould instead of a circular pan. The rest was exactly as instructed in the video. Thank you so much for this recipe. It really helps inspire baking enthusiasts like myself. :)

@@rosierojastrao5378 1 cup equals about 120 grams...you can calculate based on this.
@@pujasmriti6395 you can add a tsp of baking powder to the flour beforehand...in this recipe beating the egg whites separately does the magic ...you get a fluffy well risen cake :)

Just made it and using instant espresso powder!!
I converted the Celsius to Fahrenheit, 140 C is 284 F. I wasn’t able to set to exactly 284 degrees, baked at 300 degrees with water bath, still came out very nice.
It’s moist, light texture with a little bounce, a good coffee flavor, just right amount of sweetness, perfection!! Tku!! 👏😃

I added walnut and the cake turned out like a coffee walnut bread. 🤣 I was wondering the same about why no baking powder. Those sponge cake with baking powder comes out well always.

I love the way you don't waste the batter!
I get it. I always wondered how to get the texture so soft. You whip the egg whites to get air bubbles, then mix the whites in the main batter. But then you pour slowly into the pan to release the LARGE air bubbles. The final trick? Take a long tooth pick to get rid of the remaining large buubles. Now I know.
