Coffee Castella Cake 咖啡古早味蛋糕

Ingredients :
7 egg yolks (蛋黄)
90ml corn oil(玉米油)
100ml milk (鲜奶)
90g (3/4 cup) plain flour(普通面粉)
2 tbsp corn starch (玉米粉)
1 1/2 tbsp instant coffee powder (即溶咖啡粉)
1/2 tsp coffee essence (咖啡香精)
7 egg whites (蛋白)
1/8 tsp salt (盐)
1tsp lemon juice (柠檬汁)
105g (1/2 cup ) caster sugar (细砂糖)
your cakes look so perfect every time, it's so fluffy and soft!!! I would eat this in the morning with coffee to really give me the caffeine I need to wake me up

Thank you for the recipe and baking times are exactly as you said 90mnt for 150c, im using elba oven 50L, but curious how to make side of the cake not shringking and stay still, would love to try next time on 160c see how will do, but for now 150c are not shringking so much!

Hi Kathrine, I like to replace instant coffee and the coffee essence with real espresso is this possible ? How much quantity should I use?
My previous coffee cake with instant coffee can’t taste the coffee at all . We like strong coffee aroma in the cake.
If that’s the case, you may have to adjust the milk… otherwise it may be too liquidy…

烘的時候發很高是你的烤箱溫度太高,每台烤箱實際溫度略有不同,烤箱大小對控溫也有關係.
出爐立刻下沉及裡面濕濕 就是沒烤熟
你一定會很疑惑 發很高為什麼還沒熟,他就是沒熟
