- A cozy, veggie-packed broccoli cheddar soup recipe for a chilly spring day!
I don't know if anything makes me feel more warm and fuzzy than a good bowl of soup or chowder!! This recipe is super easy to make and incredibly nutritious. It's such a great way to add more veggies into your diet. If you like this recipe or plan on making it, let me know!
The other thing I love about soup is it's almost impossible to mess up basically just throw everything together in a pot and it'll probably turn out great haha
Ingredients:
1 medium onion, diced
2 carrots, peeled and diced
2-3 heads of broccoli, finely diced
1/4 ghee (or butter)
1/4 flour of your choice (I use an ancient grain called spelt!)
2 cups Chicken or Turkey bone broth (important for extra collagen / protein 💪🏻)
1 cup milk
1 cup cream
1 block or 2 cups of cheddar cheese
Salt, pepper, ground mustard, paprika (all to your liking but I probably used about 1/2 tsp for each)
Also as a general note, I recommend buying organic, non-GMO produce and grass-fed, organic dairy products whenever possible!

Ingredients:
Butter or ghee
Onion
Carrots
Flour
Vegetable broth
Heavy cream or half & half
Salt, pepper, dried mustard
Broccoli
Cheddar cheese
Instructions:
I don’t really use exact measurements, but chop the onion and sauté in butter/ghee until golden. Add chopped carrots. Add more butter/ghee and flour-cook for a few minutes to form a roux. Add broth and heavy cream. Add spices to your taste. Add the broccoli! Cook until all vegetables are soft and then stir in your cheddar cheese! Freshly grated is best so that it melts properly :)

Is the butter/ghee in like the condiments aisle at the store? Never seen that before
@@parisn6624 yes! it is clarified butter that is shelf stable so you will usually find it near the oils in a grocery store :)

Love this soup. Here in Canada 🇨🇦 we have Tim Hortons and they have Broccoli 🥦 soup on their menu. Since having it, I became a fan and frequently been ordering it so I went and made my own every once in a while 😊

You could but I usually don’t because it tends to be a mushier texture than how I prefer it 💛

Which broth u used?
I usually use vegetable broth but you could probably also use chicken or turkey broth as well!
Cook it all in chicken broth first
Then add cheddar soup (how my mom taught me)

Someone tell me whyyy every time I try to make this creamy soup no matter what I do it comes out so thin! It never gets thick, I do exactly as this video but mine is never thick, what am I doing wrong???
The most important part for thickness is the roux! Try adding more flour. I usually do about 1/4 cup but you could possibly add up to a 1/2 cup for this size recipe. You’ll need to add more butter as well. Make sure you cook flour + butter mixture until thick and almost dough-like, then add liquid very slowly to incorporate and let simmer as you stir until desired thickness. Let me know if that helps 💛
