They were pretty good but still not as crunchy as I would like or firm. I may add pickle crisp next time.

I use an Italian recipe . Slice them into rounds , layer them in a dish with sprinkles of coarse salt . Weight a plate on top . Leave for 24 hours . Drain and squeeze all liquid out of them. Put back in dish . Cover with white wine vinegar . Leave 24 hours . Drain and squeeze again . Blanch a lot of garlic cloves and mild chilli's, cut into large pieces . Mix in a bowl with oregano and mixed ground pickling peppers , cover with Virgin olive oil and stir . Layer tomato slices with garlic and mild chili plus spoonfuls of oregano infused oil. Top up with Virgin olive oil . Check for about 3 days , the oil level will go down , top up until it stays full. Ready to eat in a month .

I’ve never tried these but they sound good! I usually have a few green tomatoes at the end of the season that run out of time, so this sounds like a good way to use those!

These are a great way to use the end of the season green tomatoes before the frost comes.

This is a great way to lighten the load on the red ones lol this way you can preserve in waves....instead of being bombarded with all the red ones at once. However, you probably can't avoid that lol. HI GRANDMAMA!! one tablespoon is 3 teaspoons :) WOW April, these look delicious! So tell me what you eat these on or with....

The taste was spot on but they did not stay crisp or crunchy. They are still really good but I would have loved for them to be firm like a pickle. I will make them again and maybe add pickle crisp next time to see if they will stay firm.
