Tomatoes are so much easier to grow that cucumbers and there are always several green ones left on the vine when it starts getting to cool for them to ripen so thanks for this. ;)

We use to go many times per year. In Jan-Apr, sometimes twice a month, then in the summer to go swimming. when they put up the all night sodium vapor lights we found some other camping locations nearby. Each summer I bring the scout troop up to our favorite secret swimming hole. about a 20 minute hike down into the canyon. Beautiful scenery and great swimming. The scouts always want to come back. We have several other hikes that we do in the canyon, mainly in the winter. We set up camp for a week and do day trips around the area for climbing, hiking, and historical tours. The day trips include national battlefield, space center, TVA pump storage facility. They don't know it, but they learn a lot on these trips.

Thank you for the video! If I am doing a water bath canning method on a stove in a big boiling pot, how long do you suppose I should cook these jars for the lighter color caramelization? I am using 8-ounce jars that are the flat, wide style.

I use an Italian recipe . Slice them into rounds , layer them in a dish with sprinkles of coarse salt . Weight a plate on top . Leave for 24 hours . Drain and squeeze all liquid out of them. Put back in dish . Cover with white wine vinegar . Leave 24 hours . Drain and squeeze again . Blanch a lot of garlic cloves and mild chilli's, cut into large pieces . Mix in a bowl with oregano and mixed ground pickling peppers , cover with Virgin olive oil and stir . Layer tomato slices with garlic and mild chili plus spoonfuls of oregano infused oil. Top up with Virgin olive oil . Check for about 3 days , the oil level will go down , top up until it stays full. Ready to eat in a month .

I am looking for a stewed tomato recipe that my granny would make. It had peeled tomatoes with sugar, vinegar, salt and lots of black pepper. This was stewed down until it was thick and was a rich red color. We ate it over pinto beans in the winter time. After opening a jar it kept in the fridge for weeks.

I do not know of a recipe but I can definitely check with my grandma and see if she remembers a recipe or has one for something similar. I will get back with you if she has one. In the mean time if you have not checked out Rebel Canners group on Facebook try there. Everyone is very helpful and willing to share any and all recipes.
