I made this sushi bowl today, using what I had at hand (I didn't have tofu). It was absolutely delicious! I had some white jasmine rice cooking when I came across this recipe. It was just perfect timing. I basically just made the dressing, cut up some veggies, and just put everything together for a quick, delicious dinner. I used avocado, carrots, edamames, radishes, purple cabbage, sugar snap peas, and spinach. Definitely a keeper! Thank you!

Veggie fried rice is always a quick dish for the kids. Love it. In the Caribbean we have a peas and rice dish. We add coconut milk, blackeye peas, thyme, organo, onions, garlic, hot peppers and rice. Boil until rice is tender. It's such a comforting dish to eat.
I absolutely love watching you cook, cut and do your food prep work. I wonder what your training hss been? Are you a chef by Traing? Watching you brings back fond memories of my dear stepmother, Marie Ellis, who lived and worked for several years at the San Francisco Zen Center. She knew Edward Espe Brown very well and he attended her wedding to my Father on the cliffs over Muir Beach. Watching the mindful way that you cut your veggies reminded me of the mindfulness that Marie employed when she prepared meals. We talked a lot about her Buddhist approach to good preparation and mindfulness was certainly something that she took very seriously. She was also an amazing cook. But thinking all of these thoughts got me to seriously wondering where you have trained and worked. Wonderful instructive program. Have been really enjoying the versitality of your vegi burger recipe this week and next week I plan to be making your seaweed salad. Ummm and thank you very much. 🙏💖🙏
