    Think that pizza may be a little cold by the time you get your knife done.
    Seriously though, around this area pizza knives have a regular style knife handle, looks more like the blade from a paper cutter. Then on the opposite end is a flat to lay the palm on. So i was a little confused as to what the 2 "lugs" you started out with were for. But as always great video and great instructions. Thanks again.

    When my sister and her husband went to Alaska they brought back an Ulu knife. It's a traditional knife used by the Inuit woman they would use for nearly everything from cleaning fish to cutting hair. It looks much like a small handheld version of this "rocker" style of pizza cutter. And they work great for cutting pizza. I think I'm going to have to try making one now.

    That was one ugly mess of a pizza. WOW! The cutter looks like it is taking shape. I like it. More than I could hammer out with my cheap anvil.

    I can buy a pizza cutter for $3 or use a chef’s knife

      I can buy a coffee cup for $3 but prefer hand made cups from small pottery shops. I can buy hinges for a door for around $10 but as a blacksmith I sell hinges for much more to people who value hand crafted work. So if it's the cost that matter, by all means buy the $3 version. Something tells me you are not a crafts person nor an artist or you would understand the value of a one of a kind hand made item. But thanks for watching, I at least hope you found it entertaining

    A “ulu” knife/cutter would of been a lot easier to forge.

      I think that technically this would be an ulu, just a really long one.

    I must put forward the word of caution (and the word of the FDA). Only stainless steels are food contact safe materials. All carbon steels including all san-mai/damascus blades do not qualify according to FDA regulations. I can list the specific items in the code, but there is a really simple test.
    Take two blades, one stainless and one carbon steel. Place the carbon steel blade flat on your tongue. Be sure to get full contact like a full inch or so. Now wait one minute and your taste will be ruined for hours. Why? Because saliva reacts with the carbon steel, creating oxides which you taste. These same oxides are created when you cut food with your carbon knife, these oxides end up in your food. Stainless steels do not react with saliva and other food stuff. The oxide reaction is one part, the other is pitting, inclusions and rough spots. These tiny pockets can harbor dangerous pathogens that can be hard to clean, because a carbon steel knife can have these small pockets. This is especially true for damascus knives, since there are many ridges and pockets for pathogens to hide.
    One could argue that we have done so for many centuries. While that may be true, centuries ago we didn't have stainless steels, nor did the FDA exist. So sadly making a pizzacutter (whilst being fun of course), isn't a job for a blacksmith anymore.

      Interesting, I find that most people I know that take their kitchen knives seriously prefer carbon steels over stainless. But since an individual making their own kitchen utensils probably wouldn't be regulated, I suspect it won't bother me to use it in my own kitchen along with all of my other carbon steel knives.

      @@BlackBearForge of course personal preference aside you are to choose as you pleasae. The FDA wouldn't want to raid your kitchen of any knives you might own :D
      As for preferring carbon steel, I find that most argue habit or other properties. Habits die hard, even if science is telling you otherwise. That's why I always challenge everybody to take the tasting test. Minds will be altered, be warned ;)

      @@patrickd9551 Does that mean the FDA doesn't approve cast iron cookware as well?

    • @patrickd9551
      @patrickd9551 5 років тому

      @@stevenbennett5221 Well yes and no. Cast iron equipment has been approved by the FDA only if it is used in a continuous process from preparation to serving.
      Cast iron is more oxidation proof compared to carbon steel, however extended exposure to acidic food can still corrode cast iron. Furthermore cast iron is heated before use, so any pathogens are killed in the process.
      But I must say that it's a thin line. When is a cast iron skillet allowed for use? Surely a new one is allowed and a completely pitted one is not. But what are exact criteria? The FDA doesn't specify the exact damage to a skillet to reject it. Personally I only own stainless cookingware, so I don't have that problem to begin with. Cast iron things are hard to maintain and it doesn't add much value to the kitchen.
