I did your recipe and added the following. I used cilantro instead of parsley. I added a touch of oyster sauce. Then, a poured a touch of sweet red wine on it before cooking the Lobster. I also ordered Lobster sauce from my nearby Chinese restaurant and poured some on the Lobster after if was cooked. To finish it off with Red Devil Cayenne sauce on top and served it with avocado salad and fried sweet plantain. I've been now cooking this same thing once a week for almost a year. after fanning out the tail, if you push down with your thumb on the shell just above the tail it will help the tail stay fanned out.
