Congratulations that you finally reached babi guling! The tastes deviate a little in each region-even each place-despite having "Babi Guling Gianyar" in their name. I'd suggest you to look for one in Denpasar (there's one good place!), if I knew sooner
Guys, I'm from Philippines. Just wanna say, the fine difference of Babi Guling to our Lechon is that, Lechon can be serve to you the whole pig. You can cut it the way you wanted and mostly, feast with your friends with what we call Boodle fight. Lechon usually takes nasty way of eating and mostly with bare hands.
I do not eat pork but i remember watched one of Anthony Bourdain's show and he said the pig skin in Bali is the best he ever had (i forget the restaurant)

Wow! You managed to go to Selingsing Cepaka. That place was indeed hard to reach but their babi guling was definitely worth it. Was there at 5 pm and got to see their pig being roasted. It was huge! I can see the similarity of the languange. In northern philippines, BABI also means pig/pork from the indigineous language.
While I love steak just as much as the next guy, consuming either pork belly or pork skin, when roasted to crispy oily perfection, beats steak any day.
The thing is about asian dishes, especially Malaysian or Indonesian foodss, is that you have to eat it with the rice. Sometimes in combined with all the different food provided to get the "ideal taste". I know mike is just eating it seperately, but very rarely thats how the food is eaten.
For one thing, you have to enjoy rice. Some foods can be salty or too flavourfull, that is so it compliment the rice.

Best food destinations in Indonesia : Medan in North Sumatera and Manado in North Sulawesi. And to some extend Jakarta, just because you can find almost anything in Jakarta. Jogja is too sweet (generally almost all Java like sweeter version for their food), while i am not really a big fan of the combination of spice and herb in Bali. Try Medan,Mike!
What about padang? Padang is food heaven for non pork food.
Malang is also good
Central Java and yogyakarta? Yes they're mainly sweet. But East Java's food are more savory and spicy, kind of like the West Java's food although the the East Java's seasoning are more "brave". And yeah, West Java's people liked meat that perhaps have the same liking of foreigners as the meat was cooked tender while for East Java's people like their meat crunchy (crunchy fish, crunchy chicken, etc). It's more apparent in his video eating the seafood on the restaurant in Jakarta, the fish in the first restaurant was cooked more like the West Java's style, while Layar is from Surabaya, capital of East Java, the fish they served are crunchy.
You cab find extreme food in Medan and Manado. Specially Babi and Kalong (bat).
Respect to the man roasting the pig. It's not easy to sit there and cook it for "atleast" 2hours. Viola one of the best meat ever. 👌

Mike, i really love ur vids. Love ur indo tour so far. Got the feeling you enjoyed jkt more than yogya and bali. Definitely not a surprise to me personally. The food in jkt far more superior. Yogya to much sweet and bali not a fan of the spice and herbs combination. Next time go to indonesia please go to lombok, padang/bukittinggi, medan, bandung, surabaya, makassar and manado. Those cities to me, better food destinations.

2. Medan. Most and best chinese and indian influenced cuisine. 3. Bandung. Sundanese cuisine and creative snacks. Honorable mention, padang(lacks of other cuisines), surabaya and lombok(spicy cuisine)
Just my two cent yah ? I think every province or city in Indonesia has their own uniqueness. It might not be suitable for people from other city but still appreciate the uniqueness. Indonesia is diverse.

Hey Mike, you should come to south africa, Cape town, Port Elizabeth, Durban and Johannesburg. So diverse and cultures and food influence from all over the world. Each part of SA is completely different when it comes to food.

I tried Lechon De Leche. Still native to the Philippines and it is way better than regular lechon. Unfortunately it's not so mainstream to see it served because lots of people protest about it making it a taboo yet a country adjacent to ours is really enjoying it. Thats why id say Babi Guling may have better texture than Lechon but Lechon De Leche may be on par with it.

We're not technically all the same people. Some ethnic groups in the southern parts of the Philippines are found in Indonesia as well but both countries sport a large number of ethnic groups overall with genetic variations from one another.
After going to Bali, after all, is the round of a pig? It is a full course. It is delicious that I baked that skin a bit hard and fragrant. In a peaceful and relaxing restaurant, feelings calm down. Thank you very much.

manado has some really underated food like tinutuan its really good especially if u add the sambal called roa that was made with roa fish idk but its superr delicious i ended up buying 5 jar of sambal roa 🤣 but seriously their sambal is awesome
they also have the RW flavour like bebek bumbu RW in english its called duck with RW flavour idk what RW is but its freakin delicious
manado has a really good grilled fish too with their rica bakar or burned sambal i guess but its good
