How To - Dehydrated Chicken Pad Thai

  • In this video I show you how to make one of our favourite meals, chicken pad thai and convert it into an amazing dehydrated trail meal. I give you a few helpful tips for turning any of your favourite dinners into easy to store and easy to pack camp meals as well as show you how to prepare your new favourite dish at camp.
    P.S. For those of you wondering, yeah those are swarms of blackflies flying in front of the camera towards the end - they were intense this weekend.

      I'm so glad you enjoyed that! Comfort at camp, including what we eat is so important, mixing up the menu keeps us excited for dinner and provides a nice luxury at camp ;) I'm planning to post a few more favourite meals this season, I look forward to your feedback :)

      Here's the detailed recipe I used for 2 generous portions:
      1. Cook thai rice noodles according to package instructions
      2. Saute (with no oil) the following:
      -1/2 a red pepper, diced
      -1/2 a yellow pepper, diced
      -2 medium carrots, grated
      -1/2 a medium yellow onion, diced
      -2 large cloves of garlic, diced
      -1 Tbsp fresh ginger, diced (this is a lot, feel free to use less)
      3. Make the sauce and set aside:
      -1/4 C brown sugar
      -1/4 C soy sauce
      -2 Tbsp rice vinegar
      -1 Tbsp lime juice
      -1 Tbsp fish sauce
      -1 Tbsp sesame seeds
      4. When veggies are cooked, add the rice noodles to the pan along with 1/2 C chopped fresh cilantro, 1/4 C chopped unsalted peanuts and the sauce, stir over heat for 2 minutes, then remove from heat and taste test ;)
      Dehydrating:
      1. Rinse, squeeze out extra moisture and spread 1 can of chunk chicken breast on a dehydrator fruit leather tray. Dehydrate separately at 160'F until crunchy dry (about 6 hours) Set aside in an airtight container for later
      2. Portion out your cooked pad thai onto fruit leather trays in your dehydrator, set to 135'F and leave in for at least 10 hours, flipping and crumbling at the halfway mark. If it isn't crunchy, leave it in for a few more hours (this time can vary depending on the humidity of your area)
      3. Add the chicken to the dehydrated pad thai and package in an airtight container for short term storage or in a ziplock or vacuum sealed bag for long term storage
      Preparing at camp:
      1. Pour dehydrated meal into your cook pot, pour in enough water to just cover the food
      2. Bring to a simmer for 5 minutes
      3. Remove from heat and let stand for 5 minutes
      4. Stir in 1 Tbsp of olive oil, dish out and enjoy!

      Got my batch in the dehydrator now! I had a small bowl with shrimp for dinner (before dehydrating) and i added a spoon of peanut butter in when I added the olive oil and that was yummy. I often have little packets of PB in my food bag, so will try that on the trail. Thanks again!

      Haha! Next time we'll skip the fresh food altogether friend, I've been experimenting with dehydrated meals all winter to prepare for this season, we've got a few surprises coming, just you wait! ;)
