That recipe looks great, definitely gonna try this. I have a few ideas for enhancement, substitution . . .
You can actually buy pad Thai powder. It has most all the flavors in a powdered form.
You can also buy peanut butter powder. That would save a fair bit of weight from using real peanut butter.
I think a great addition to this would be some pre-grated cabbage and carrots. Real pad thai usually has bean sprouts or veggies for crunch. Cabbage and carrots last a long time without refrigeration.
If you have an appropriate container, you could start soaking the rice noodles in water in the morning, and carry them in your pack. This cuts down on the cooking time, saving fuel.
Finally, if you want that sort of citric acid and a little bit of heat, instead of a line you could use Mexican Tajin powder - basically citric acid and chili powder.

I have many fond memories of enjoying peanut noodles at the Coast Camp at Point Reyes, watching the sun set from the beach. What a special place!
Made the Pad Thai this weekend hiking, and it was so amazing!!!

Great idea! I would not call it Pad Thai, though ;) I was thinking recently about it, b/c there are lots of Asian dishes that could be done this way. My PT sauce is 2tb soy sauce, 2tb fish sauce, 2tb sugar, 2tb lime juice, 1tb ketchup and a bit of ginger, chilli and clove of garlic. Would be enough for half a 500g pack of spaghetti/noodles. All the ingredients are required in small quantities and don't have to be refrigerated. Other good dishes are Yakisoba noodles, Singapore noodles (need more sauce than traditional IMHO), noodles with peanut butter sauce, chow mein, etc.
No worries Pavel. There are many styles of pad thai sauces out there. I usually don't include soy sauce in Thai cuisine but it would be a tasty sauce.
I have added a packet of soy sauce ( instead of salt) and a packet of chicken. Tasty dish.

I can't even begin to say how yummy this is! We added 1/4 cup of coconut milk powder. Next time thinking of adding 2 packets of soy sauce!

I actually say this a lot but.. people would be surprised what you can put peanut butter on. Peanut butter serano cheese burgers are my favorite and I just tried this pad Thai with limited ingredients and ate the crap out of it. Always interested to find ingredients I might not think about using. Discovered dehydrated peanut butter a couple of years ago. Watching some of your recipes with dehydrated coconut milk powder reopens my interest in coconut based curries. I just could never use an entire can of coconut milk fast enough before it would spoil. Have you thought about using powder peanut butter that way you can mix all your dry ingredients together that is how i do it noodles spices ect but ill have to bring a lime next time

Great to have you along DS! Yup, the packaged meals aren’t that great and get pretty expensive over multiple days.
Thai curries are my go-to backpacking meal
Water, coconut powder, curry paste, coconut oil packet, PB packets, crushed peanuts, sambal oelek / chili garlic packet, lime, and any array of freeze dried veggie(Mother Earth Products has good stuff) that you like. Nice and light, being vac packed will last longer than I will, and has a ton of flavor considering the lack of fresh ingredients(other than lime, but that doesnt make it on longer trips anyway). Comes in significantly cheaper than anything prepackaged, especially if you go for a keto option.
Im sure someone familiar with traditional thai curries would be disgusted that I even call it that, but the starving backpackers I feed dont seem to mind it.
Going to have to give this pad thai a try sometime, subbing some far less satisfying heart of palm noodles

Some green onion still have the root ball attached, u can keep it wet in some paper towel, and plant it in ur herb garden for fresh green onion all summer long 😝

You've got some really great ideas and recipes. Do you have any suggestions on how to get some chicken into this dish? I mean without packing in fresh raw chicken.
sure! Just use some packaged, canned chicken or chicken jerky. Also try some alternative meat options or pre-cooked tofu.
@@ChefCorso I see you can get envelopes of Teriyaki chicken just like tuna envelopes. That would work, if only it was sold in my store locally. They offer a peri peri tuna envelope where I'm at. I wonder if that would work okay.
@@kenlucas7731 yes, the tuna packets can works well too. For the chicken, I often do a quick order from Amazon/Web to stock up.
Love this! Easy enough to tailor to paleo diet too! Thinking small prepackaged almond butter would work well in this dish.
I have tried Wild Zora meals as well. Loved the idea of it but the flavor was lacking for me
After eating paleo for a couple years, the other brands of freeze dried meals are basically gut bombs for me😂

Hey BA! yep, packets work great and this is an easy recipe to customize for flavor or diet. There are some better packaged meals nowadays, but all lack freshness and texture. And I don't know about you, but I just don't like eating out of bag. Cheers!

For 1 portion: 1-2 TB of coco, 1-2 tsp ginger, 1/2 tsp garlic. Add, taste, adjust
@@ChefCorso Thanks. Prepping for trip and tried this at home. Tried powdered peanut butter - didn't come out very well. Worked better with real peanut butter. Timing the noodles and the water to leave in is a little tricky.

2 TB of coconut milk pwdr, 1/2 tsp garlic powder for this portion. And remember you can always add more after taste testing.

You always seem to pick the worst spots to actually cook lol. Sand on everything, in the food. I mean the idea is great but damn I hate sand in my food.
