How to Prepare, Cook and Dehydrate Great Camping Food - Thai Red Curry!

- A meal I've longed to take on a hike. This is made with the absolute minimum amount of fat/oil and is perfect for long-term storage.
IT IS DELICIOUS!!!
Shopping list:
Jasmine Rice
3 Red Peppers
5 Red Chillis
A whole Garlic Bulb
Scallion onions/shallots (Tesco Finest good)
Turmeric
Coriander Powder
Cumin Seeds
A dash of chilli powder
Salt and pepper
One lemon
One lime
2 small tubs of cashews (from the Tesco snack aisle)
Coconut milk powder
If you want to add chicken (It doesn't need it) then it's 4 chicken breasts poached then coated with desiccated coconut.
400ml Water seems about right for rehydration.

Tried this - both the dehydrated version and the regular version w/o chicken since I am vegetarian. Both turned out extremely yumm. Even if someone is not into dehydrating meals, this recipe can be followed for normal weeknight dinner. It is amazing. Who would imagine having such a flavorful, healthy and home made thai red curry on the trails. Thank you for posting this.

Hi Richard- I enjoyed this video and wanted to encourage you to continue producing them. I have not noticed any awkwardness or unease in your presentation and I think your humor and personality shine brightly. I have to admit I really didn’t know how the curry had turned out upon your taste test; the suspense and ultimate approval of the curry was brilliant. I’ve never felt this type of suspense in a cooking video before- bravo!
One question- I know timing varies, but were all of the ingredients dehydrated for about 8 hours? I’m always unsure of how dry they should be. Thanks Richard!
Hi Michael and thank you for the kind comments! Regarding dehydrating times - they vary according to the ingredients. Chicken (definitely not needed in this recipe) about 6 hours, rice - 8 hours and the sauce took about 18 hours. I think the sauce takes so long because the spread of heat through the sauce is reduced due to the plastic (fruit leather) inserts which are required. The chicken should be hard and crumbly, as should the rice. The sauce gets pretty brittle too, if a little bendy in places. Thanks again. Richard.

Would marinating and seasoning the chicken in the paste overnight before dehydration perhaps add the flavour you thought to be missing? I’m thinking about buying myself a dehydrator in the future so this was extremely helpful!
I have th hose same rubbery screens ... currently being useful in dehydrating some Taco Chick Peas.

-if you take out the chicken meat you should replace it with something else or you won't get the amount of calories needed for your hike. Rice and veggies won't cut it basically. You can use nuts instead, or maybe a bit of (dehydrated) shrimps/fish.
-I would like to see the right amount of ingredients in the video next time and maybe add the weight of the total package, when the coconut powder is added.
-it is dehydrated food right? What was the point of putting it back in the freezer then? Maybe explain yourself next time, it seemed redundant to me anyway..
Great video, love to see some actual video of your walking trip and cooking the meal realtime.

A quick question: it looked like you didn’t soak the dehydrated food before turning on the heat - is that what happened, or just the way it looked on the video.
Hi, yes - I don't find it makes any difference unless you soak for ages.
How did you know how much water to put in ? Did you measure the wet ingredients and then when dry? to know the amount of liquid that taken out?

Can you also do some videos on dehydrating seasoned tofu if that is at all possible?
Couldn’t you just replace meat with tofu and dehydrate as per my video?
@@RichardOutdoors I did try dehydrating firm tofu per information found online .. but they wouldn't rehydrate properly. They would stay hard after rehydration. During through hikes, it's hard to spend too much fuel of boiling the tofu. So I am not even sure if it is possible to dehydrate and rehydrate tofu or I just did something wrong.
Richard, I hope you are still being notified about comments on this early vlog.
Despite showing the cooking of the large chicken pieces, you then suggest above they are optional .
In later videos, when you have more experience of dehydrating, you are shown meticulously shredding chicken into tiny fibres and emphasise how important that is for easier rehydration.
So, how did this early attempt turn out ?

I wonder if you worked out what the nutritional value of the meal is? Although your version without chicken might fill you up, you probably do need the protein. Maybe it could be worth trying a textured soya protein version? Might be a cheaper option that boosts the nutritional aspect without changing the overall texture. Just a thought...

Hi Steve. All good options although I’m not a fan of soya. I’d be more bothered if I was using the recipes for more extreme/arduous expeditions. However, I just like a tasty snack under a tarp!
