A Shrimp Fried Rice Recipe So Easy... You Must Try it!

    Most people recommend using day-old rice to make fried rice for a fluffy result. This recipe is an exception. You can use freshly cooked rice. It doesn’t matter if your rice is wet and mussy either because mixing the egg with the rice keeps the grains from sticking to each other.
    INGREDIENTS (serves 2 people)
    2 cups (330g) of cooked rice
    2 whole eggs
    1 tbsp of soy sauce (Amazon Link - geni.us/light-...)
    1 tbsp of oyster sauce (Amazon Link - geni.us/premiu...)
    1 tsp of dark soy sauce (Amazon Link - geni.us/dark-s...)
    1 tbsp of garlic chili sauce (any brand will work) (Amazon Link - geni.us/sambal...)
    3 tbsp of oil to stir fry
    1 tbsp of minced garlic
    1/4 cup of diced onion
    2/3 cups (80g) of diced vegetables
    1 cup (150g) of peeled and deveined shrimp
    1/4 tsp of salt
    White pepper to taste (Amazon Link - geni.us/white-...)
    A drizzle of oil to marinade the shrimp
    INSTRUCTIONS
    Season the shrimp with some salt, white pepper, and a drizzle of oil. Mix well and set it aside.
    Season the rice with soy sauce, oyster sauce, dark soy sauce, and Sambal chili sauce. The benefit of seasoning the rice before cooking is that you can take your time to get everything ready to avoid rummaging around when the heat is on.
    Crack 2 eggs into the rice and mix well.
    Turn the heat to high and heat the wok until smoking hot. Drizzle in some cooking oil, and swirl it around. Add the shrimp. Stir for just a minute. Once the shrimp change color, add the diced onion and garlic. Keep stirring until fragrant.
    Add the diced vegetables and stir for a few minutes or until cooked through.
    Remove the shrimp & vegetables from the wok. Drizzle more oil into the wok and add the rice. Stir over medium heat for a few minutes. Don’t use high heat otherwise, you will burn the egg. The rice will be gluey in the beginning. As the egg starts solidifying, the grains will separate naturally.
    When the rice becomes fluffy, introduce the shrimp and the vegetables back to the wok. Sprinkle some diced scallions and sesame seeds for extra flavor. Give it a final toss and serve.

    Mandy, preseasoning the rice and coating it with eggs before bringing it to the wok is GENIUS!! It's a total gamechanger for me since I live in an apartment with a very weak stove.
    I've never had such flavorful and evenly cooked fried rice. You're THE BEST!

    I made this for dinner this evening. It was so much more flavorful than how I used to make shrimp fried rice. The addition of oyster sauce and chili paste gives such a knockout flavor. Adding the seasonings before stir frying is genius! This is my new go to recipe. Thank you!

    It was such a revelation to me in that you can mix seasonings and egg into the rice and it comes out beautifully. The other great tip is that we can do this recipe with with recently cooked rice. Waiting a day or preparing it a day ahead isn't necessary. I loved learning these things from you. Great job Mindy! I'm so glad I found your Souped Up Recipes. Thank you so very much.

    Thank you 🥰. I never knew how to make fried rice, and ordering takeout was easier before. But, I stopped eating takeout to save money and because it's healthier to eat at home. Recently, I tried to eat takeout, and it upset my stomach. I prefer cooking dishes myself now. Your videos have been very helpful. I just ordered the wok you have on Amazon 🥰

    This is great- I usually end up with a soggy mass of bad fried rice not fit to feed anyone. Now Mandy has revealed how to avoid. She has the best scientific way of doing things, very good teacher!

      It was most likely your rice 🍚 cook 🍳 the white rice 🍚 😋 this way.
      2 cups 🥤 of water and salt 🧂, garlic powder and oil 🛢
      Boil the watae then add 1 cup 🥤 of rice and a half then cook it for about 20 minutes in low temperature with a lid cover on it.. make sure you check the rice 🍚 every 5 minutes and mix it

    Thank you (thank you, thank you) once again! Another grand-slam home run recipe! As a single person it was easy to halve the recipe for 1. I was skeptical about the premixing of the egg into the rice but I was pleasantly surprised when it worked just as you said that it would! Happy rice grains jumping in the wok. The sauce combinations are spot-on perfect! I encourage folks to add the chili paste as it adds just the right tingle without being overbearing. 2 minor enhancements: (1) I nearly always cook jasmine rice with chicken stock or bouillon to give it an extra kick of flavor. (2) I had raw jumbo shrimp on hand in the freezer, so I peeled and butterflied them in half to make nice bite sized pieces. My largest compliment to ALL of your recipes that I've tried is that they truly DO taste better than takeout~! For years I surfed the web and watched others prepare Chinese cuisine but there always seemed to be something lacking or over-powering. Bless you and your family for bringing these recipes to my home!

    i was hesitant of mixing the sauce and eggs into the rice because most of the problems i have with making good fried rice is because it comes out mushy. but after trying the technique you suggested it actually came out not as soggy as i thought. once again you came up with another great recipie. keep putting out great content xD

    Easiest and tasty Asian fried rice.
    I didn’t use the Sambal chili sauce, but, since you said that any vegetables can be used, I decided to only use the vegetables from the Taylor Farms Sweet Kale Chopped Kit 12 ounce salad bag, (sold at Walmart in produce), instead of the vegetables suggested in this video.
    It came out delicious and slightly umami.
    Thanks again, Ms Mandy, for your all your time, effort, excellent instructions, delicious recipes, and suggestions.

    I didn’t have Sambal, substitute with Hot Pepper Jelly, works perfectly plus it adds a bit of sweetness. I buy the large bag of cooked shrimp bc I get many meals from the bag. I only add onions to MY bowl bc I share this with my dogs, they like shrimp too! It’s a very filling meal & basically is healthy for you. Thanks!

    When I used to eat meat I would make it alot differently. Cold rice is used and grains separated added after egg after onion slightly translucent high heat. Use sugar salt and soy sauce protein of choice...if I were to remake it I would add rice sooner yours seems like a moist fried rice

    Mandy, Rob Barr in Melbourne Australia here. I bought your wok recently and really enjoying getting to learn more about how to use it well. So far I have only cooked Singapore (Hong Kong) Noodles last week and Shrimp Fried Rice tonight. Both turned out quite well, except my rice didn’t ‘dance’ in the wok like yours.
