(Ceran stove top does not get hot enough) Happy with it! About the onions: a thing I am doing, if using larger chunks: (I don't know, if this is a common technique) I marinate them in light soy sauce. 1/2 an hour, or so. So, when I stir fry them: they don't burn on the edges. They stay juicy. Not for every recipe. I sometimes want them to caramalise. But I wondered why they where served in some restaurants like this. This is just my "experimental kitchen". Greetings from the far north of Germany!

I also take the egg out and sear ingredients, then do the rice separately to give it that wok-hei before layering everything back in. That looks amazing, Flo - glad to see you show it the right way. Tip to others who need to dry up rice quickly - stir it apart and put it uncovered in the fridge top shelf.

Anyone looking for wok recommendations: I have the carbon steel wok from MadeIn and I absolutely love it. It’s a bit pricy but I use it every day so I definitely get my money’s worth. The only thing that’s a bit of a pain is seasoning and maintaining it, but I bought some cast iron soap and it cleans it perfectly without stripping the seasoning
As taught by my mother, I have been preparing fried rice with left-over jasmine rice kept in the refrigerator overnight. As you mentioned, this dries the rice so that it is not sticky in the finished product. However, for a couple of years, I have been preparing fried rice with freshly cooked Basmati rice with excellent results. The rice grains are not sticky.

It's a Lodge Cast Iron 14" wok ("pre seasoned" with veg oil), and including tax, free delivery and is only 52.96! Lodge Cast Iron is a ~125 YO family owned company in Tennessee, very well known and respected among 'Southerners'.

I’ve seen larger ones but have never seen a smaller wok. It’s the normal size, I think. Using a large frying pan will work. You just need space to move the food around.
Okay, I'm going to follow your sequencing the partially cooked ingredients (e.g. eggs, shrip, etc) in/out of the wok instead of my usual throwing them in all in at once.

@@FloLum It had to be the heat- all tho I watched for the smoke and..oh! I dunno! My wok is stainless too. I think I’ve mentioned this. The directions on it said not to use any metal utensils, so I tried using just wooden- I’m going to keep at it! Maybe one day I’ll be able to make fried rice like you do. 😊

Can you do a video on how to cook rice properly cause I can not cook rice as it always goes gluggy and it doesn't matter how many times I rinse the rice to get the starch off it and I love fried rice but I can't or don't make it cause my rice would be gluggy so can you please help me out
Since you never measure anything accurately I feel that this fried rice recipe needs more oyster sauce and soy sauce than you said. That's the only negative comment you'll ever get from me this is a very simple way to cook Asian food

I always squash down the cold rice with my potato masher lol and I use 5 spice seasoning

What rice would one use just white rice or jasmine rice?
I use what I have which is usually Jasmine, short grain Japanese or Basmati. Any leftover rice will do.

Making sure it heats up before adding oil and food. When you add food too soon, it’ll stick and you must use enough oil.
