I am Chinese and the way I like to flavor the fried rice is to put soy sauce, oyster sauce and a touch of sesame oil, add the scallions toss,plate, and top with Chinese parsley and scallions. People love this recipe. Try it, and you might be surprised. I am from Hawaii, so it's a Hawaiian recipe, Try it,you might like it. And I am part Hawaiian, Chinese, decent 4th generation.
Oh yes that is great. I will try that too, my grandma added oyster sauce and that 5 powder mix too, her was better to me, because she was my grandma and my hero so anything she did was great in my book.

I make my rice darker with dark soy sauce, bean sprouts, fried egg. This is old school, authentic way. Lots of crisp onions and scallions on top of finished dish.

IN MY VIEW There are different ways to make fried rice. I definitely am going to try your way! I always cook my shrimp 2 minutes and it always seemed too cooked. I loved separating the egg yoke. I subscribed immediately to your channal.
Interesting preparation. I just use frozen peas or mixed vegetables. Day old rice is better, but drying fresh rice is key. I usually whisk the whole egg. After cooking the protein and vegetables. Push it to the side of the wok and cook the egg. Add the rice, add more oil, the rice absorbs a lot of oil. Add seasonings. ( I use oyster sauce), Turn off the heat when done, add the green onions after the rice is off the heat. Add more green onions for garnish. Your recipe works, but takes more steps.

I'm black, and I like my fried rice the same as yours minus the oyster sauce (allergic to all shellfish, etc). Enjoy!

If you can find a carbon steel wok, you will be able to creat the wok hei easily. 😀
