    I used to work at Winchell's Doughnuts back at University (1979!) as an overnight baker (100+ dozen doughnuts EVERY NIGHT.) Here is my number one tip: Use a fat for frying that is solid at room temperature, such as coconut oil. As soon as it cools, bam: non-squishy.
    THIS is the secret to a non-oily doughnut. 😉 Trust me.

      Hmm Im no senior (I fried stuff before going keto though) but in my experience, oil is absorbed from the oil being too cool when the food is put in. When oil is too hot from the get go, it burns the outside and leaves the food inside raw

      You’re correct, 375° was too hot. I usually fry at 350°. Might be worth a try at that temp. But good for you guys for trying so we can see.

    Interesting.🙂 The Allulose will make it brown much faster than other keto sweeteners.

    Allowing the pork rind donut dough to chill in the fridge before frying may make a big difference in the frying process. I love seeing all of your adventures!

      I was going to say to put the dough in the freezer so you could roll them then put back into the freezer for awhile before frying them

      You can add also a little bit of alcohol to this dow - it will evaporate and stop the oil to go into the „donut holes“

    I used a small egg bite mold for the donut holes and cooked them in the air fryer. Perfection!

    I’ve made the first recipe. I place the batter in a piping bag and use it to fill the mini donut pan.

    I have found that most pork rind brands do NOT work when sweetened because they taste either too bacony or smokey. My go to brand for a sweet recipe is Old Dutch pork rinds. They are very bland and work extremely well when sweetened. I like to make a faux graham crust for my cheesecakes with them. Sooo tasty!

      Old Dutch is my favorite brand pork rind as well (I use them as a toast substitute with my eggs) and yes, please share your crust recipe? 😃

      So thats the secret? Ive tried keto muddy buddies using pork rinds and the recipe didn't say anything about brands that had more or less flavor, and don't think i have ever had a bland pork rind so i did not know that was a thing...I hated the pork rind muddy buddies i made but it would be nice if it worked.

    On the donut holes, maybe put the dough in the refrigerator till firm. Once the dough is chilled, you could roll into tiny donut holes.

    Hey y'all, just wanted to say you girls are the best! I really appreciate what y'all do and you make it fun! Some tips from an old-time baker and pastry chef: 350F will work for temp. Anything less is too low and the product will absorb the oil. Use an ice cream scoop, I believe the #30 is a good size. I use a #16 to make my Italian Wedding Cookies. Refrigerate the batter for a little bit before scooping. It will help keep the shape.

    I think the allulose browned the donut holes way too quickly so I would use other sweeteners instead. Also, my small ice cream scoop is larger than a teaspoon. Another thought is maybe chill the dough first to get rounder shape. I think I will give this recipe a try. I might even remember to report back.

    Sometimes, it helps to refrigerate foods that are going to be deep fried prior to actually frying them.

    Allulose burns so quickly and holds moisture, which may be what happened to the second ones. The first ones looked amazing!

    You could try making the second dough into funnel cakes. Pour the dough into the oil pushed through a funnel. They would cook faster and not be so brown. :)

    I scooped the blueberry donut dough into mini muffin pans and baked them the same as the donut and iced them the same except I used lemon juice instead of extract. Also, thanks Sarah for mentioning the yoga blocks in my sauna blanket! They make it so much more comfortable!

    I love watching the two of you! It's fun to see you learn as you go (like we all did!). First thing, you never turn the temperature down on the oil, it will be absorbed by whatever you're trying to fry. Second, next time you make these instead of using an oil out of a bottle you need to melt lard to fry them in- the type of oil you use for frying makes a big difference. DO refridgerate this dough for about a half hour before attempting to fry them and if the shape bothers you then use a cookie scoop to drop them into the oil. I'm really proud of you for attempting to create the different recipes on the internet, and I always have to remind myself that you are just learning cooking techniques. Carry on!

    Pork goes very well with sweet ingredients so it's seems like a good idea to use them in this way. I have another 20 pounds to loose so I'm just eating basic but once I hit my goal I will start working recipes like these into my diet occasionally. I look forward to trying them.

    Chef John (Food Wishes) did a "Breakfast Donut" recipe that, if you substituted a keto-friendly sweetener for the maple syrup, would be keto. It's made with almond flour and is baked, and it actually has a crumb.

    Notes for self based on comments (trying to round them up because they sound useful:)
    So-- based on comments: don't turn down the oil, maybe use a different sweetener instead to keep it from browning. (I use Swerve to sweeten although I've never tried baking with it. I have used it in mug cakes....) Although the doughnut holes aren't baked, either....
    And brand does matter when it comes to porkiness in pork rinds. (Old Dutch)
    There are some interesting takes on the allulose factor: allulose holds moisture and promotes browning. One person suggests adding a teaspoon of coconut flour and letting sit to offset the wetness.

    Try them in an airfryer or backed them in a mini muffin tin.... I found that frying gf flours and the pork rinds are vary absorbent 🥰

    I put the doughnut batter into a Ziploc bag and snip off the end and it Is easy to squirt into the molds that way.

    I just whipped up a batch or the pork rind donuts holes and put them in my dash donut maker. I did not have birthday cake extract so I used some butter vanilla bakery emulsion. The turned out great but were a bit porky when hot. They were better once they cooled down.

    I have 1 for you guys to try with the pork rinds..I saw your video using cocoa powder...I made that recipe BUT, I used the Lily's sugar free chocolate chips, I melted them in the microwave drizzled on he pork rinds IN the plastic bag and then sprinkled the powdered swerve while it was still warm and tossed it around, let it Cool and then try it .

    When frying, if the oil is too hot, you get brown on the outside and raw on the inside. If the oil temp is too low what you fry, especially if the batter or veg contains high moisture, will soak up a lot of oil. Try frying at 350 for better results.

    So, you could try to use a pastry bag to make the donut "hole" dollops for the shape you want.

    I started Keto one month ago. I've lost 8 lbs. I was getting discouraged thinking about all the things I could never eat again. Then I started watching your channel. I went back to videos of cheating, falling off the diet, etc. They are so helpful. Then you put up great videos of Keto friendly bread and donuts and I think there are still some treats I can make to satisfy those cravings! I'm sticking to straight healthy Keto for now but I know that some yummy things are in my future. Thank you for all the great content you are putting out. I don't think I could do this without you.

      Dr Berg on youtube has some great keto info content! He is my inspiration for doing keto. He also a lot of great keto recipes, highly recommend checking him out!

    I enjoyed this video, as always! The lemon blueberry donut did look delicious. I must try them soon. However, I did want to tell you about a Donut Hole recipe I put together. I use Victoria's Keto Kitchen All Purpose flour blend (1 cup). I add baking powder(1.5 tsp), stevia (4 tsp), & a pinch of salt to the flour mixture. I mix vanilla extract (2 tsp) into Greek yogurt (1/2 cup) & combine both the wet & dry together to form a dough. It does take a minute using a small spatula. Once well combined, I am then able to roll them into small donut holes by hand. I fry them in 325° avocado oil until a dark golden brown. Top them with a keto confectioners sweetener or roll them in a cinnamon & granulated keto sweetener of choice. Good luck if you do try them. I hope you enjoy them as much as I do. 😉

    Great video! Going to try the baked donuts, not a fan of anything pork rinds, including pork rinds. The type of oil you use can also make the things you’re frying brown too fast.

    Allulose tends to cook up darker than other sugar substitutes.

    I finally bought a set of scoops, they used to be used just for ice cream, but I see them now called cookie scoops. Anyway, the kind with the handle you squeeze to drop the dough into the baking tray, or in this case, into the oil. Just drop it very close to the oil, so it doesn't splash.
    Anyway, these scoops are great for my sticky keto doughs.

    For the donut holes - I added sour cream, flaxseeds powder and just baked them in the oven instead of frying. The texture was really bouncy and moist and not greasy at all

    I would have placed the batter for the donut holes in the freezer if about 15 minutes for it to thicken a bit and then uou could have made the round donut hole easier and it would have been easier to place in the frying pan. Also also try to fry something at a lower heat than required, it may take a little longer to fry but it’ll get a really good fry

    You girls should try to use a pastry bag and pipe the pork rind doughnut holes into the hot oil, and leave the temp higher because they will absorb a lot of oil if the oil
    Isn't kept hot enough 😊

    Twins, thanks for doing the trial and error so we don’t have to 😊 You guys are adorable. Definitely trying both recipes. As for the pork rind dough, it seemed too soft right off the bat so sloppy batter will already absorb too much oil; combine with oil that’s not hot enough... Pork rinds firm up upon standing so I will let it stand for 30 mins or so. Not sure about refrigerating as that could chill it too much.

    I've noticed that allulose seems to carnalize very quickly so I always cook things with it at a lower temperature which might be why yours darkened without cooking inside.

    I think the allulose contributed to the dark brown problem. I would use different sweeteners
