I made this muffin today and I was impressed! Toasting it makes all the difference, too. I'm thinking of doubling the recipe and using a larger bowl to try this as a hamburger bun.
I would chop the spinach and put it in with the eggs and just scramble them. Easy. I like the idea of the onion jam.
P.S. must say Sarahs hair looks fabulous! But Emily is also 💯🫶🏼

We love to have breakfast for supper. Actually, now that I think about it, probably we have it more for supper than we do for actual breakfast. I usually make a breakfast casserole and Crockpot grits but every once in a while I'll make breakfast sandwiches. I should add that we aren't Keto people. I just came across your channel one day and really enjoyed the video I watched so I subbed and keep watching. 🥰

These muffins are wonderful toasted with cream cheese spreaded on, home grown broccoli sprouts, sliced avocado, topped with everything bagel seasoning. YUM!!! ❤

The best keto breakfast sandwich that I have ever had is a “dream” biscuits using Victoria’s keto flour, bacon and egg. Tastes just like a McMuffin. Pro tip: if you add butter extract to the recipe, it tastes like a Popeye’s biscuit.

I think microwaving the eggs would works too. They might not be quite as fluffy but they do turn out quite airy so I think it would be similar. You just have to check them often because it's easy to overcook them.

Tried this and liked it. My only suggestion (maybe my OCD) is since my egg is square, I made the English muffin square to fit the same size as the egg. It helps contain everything on the sandwich.
