    RECIPE: Classic Shepherd’s Pie
    Makes 4 servings
    PREP TIME: 15 minutes
    COOK TIME: 35 minutes
    Ingredients:
    Mashed Potatoes
    2 pounds potatoes, peeled and cubed
    ¼ cup Earth Balance vegan butter
    ¼ cup unsweetened nondairy milk
    1 tablespoon finely chopped chives
    ½ to 1 teaspoon sea salt (to taste)
    ¼ to ½ teaspoon ground pepper (to taste)
    1⁄8 teaspoon smoked paprika
    Filling
    1 cup finely chopped onion (about 1 onion)
    2 tablespoons vegetable oil
    3 garlic cloves, minced
    1 teaspoon fresh thyme leaves
    1⁄2 teaspoon ground sage
    1⁄2 teaspoon sea salt
    1⁄2 teaspoon ground pepper
    2 cups frozen mixed veg (mostly thawed)
    3 cups Gardein Beefless Ground (thawed overnight in the fridge)
    2 tablespoons vegan Worcestershire
    1 tablespoon tomato paste
    1 tablespoon cornstarch
    1 cup low- sodium vegetable stock
    Directions:
    To make the mashed potatoes, bring a large pot of cold water with the potatoes to a boil. Cook until tender and falling apart easily, 10 to 12 minutes.
    Preheat the oven to 400°F. You’ll need an 8 x 8 square baking dish.
    To make the filling, sauté the onion in a skillet with the vegetable oil over medium heat for 3 minutes until just softened.
    Stir in the garlic, thyme, sage, salt, and pepper and heat through for about 1 minute.
    Add beefless ground and veggies and continue to cook for 5 minutes.
    Mix together the veg stock, Worcestershire, tomato paste, and cornstarch. Mixing cornstarch with a bit of the liquid to make a slurry before adding to the all of the liquid to prevent lumps. Stir well. Then add to the pan and stir for 1 minute as the liquid thickens. Then turn off the heat.
    Drain the mashed potatoes from water and add back to the pot you cooked them in. Mash with vegan butter, milk, sea salt, ground pepper, and chives until smooth.
    Add the filling to the casserole dish and spread out in an even layer. Then add all the mashed potatoes on top and use a spatula to spread it out evenly to the edges. Sprinkle with smoked paprika evenly on top.
    Bake on the middle rack of the oven for 20 minutes or until the top is golden brown and the filling is bubbling. If the top is not getting golden, move to the top rack for another 5 to 8 minutes.
    Let the shepherd’s pie rest for about 10 to 15 minutes before slicing and serving.

    Made this today for Christmas dinner and turned out amazing! Unfortunately, I have a lot of omnivores in my family. They loved it!! I made a completely vegan dinner for the family and all meals I made were Lauren's hot for food recipes. Thank you so much, Lauren!!!

    I swear, I just made this a month ago for myself, and then last week for Christmas dinner for my non-vegan family and they were none the wiser! Then I see this video and you created this the same way I did! This meal is painfully easy and SO delicious!

    those beefless grounds are the only meat substitute we enjoy. we love using them for anything we would have used ground beef for! if we don't have them, we use lentils- which is yummy too!

    Shepherd's pie is actually a lamb pie, hence the Shepherd. Beef pie is a cottage pie. Awesome to see an alternative though!

    Actually shepherds pie is made with ground lamb. A cottage pie is made with ground beef.
    But hey! Love your recipes anyway Lauren and this recipe looks absolutely delicious!! I'd love to try this recipe!

      I think that's a North American vs. European thing! :) I've never had a shepherds pie here without beef/beef substitute but then I also don't think ground lamb/ground lamb substitute is readily available in most parts of NA

    This shepards pie was good. I used substitute meat from traderjoes. Bt added cream cheese, almond milk, vegan butter for a creamier mashed potatoe and broiled it for a toasty top. It was good & most of my family thought it was beef; delis. 🍁

    I've made this twice now and it is my favorite meal in the world! I used Morningstar's Grillers Crumbles as the "beef". For my potatoes I used a potato ricer. I would highly advise investing in one. I added vegetable broth, Miyoko's butter, rice milk, and Hellmann's Vegan mayo to my potatoes instead. 10/10 would recommend Lauren's vegan shepherd pie recipe. Remember to always taste as you go.

    Every one does there Sheperds pie different.. I was brought up with it.. being a layer of ground meat, cream style and reg. whole kernel corn mixed together.. that next layer... than your potato mixture. That it! I do have a friend that puts peas not corn and she also makes a gravy or sauce to put in hers.. I just like it the way I had it growing up.. Still make it today.. Vegan of coarse and I do use the Gardein beefless beef.

      Kim Cote When I was a kid, ours had lots of tomatoes, corn, peas, and I think cheese on top of the mash.

      Yeah that's the french canadian way! It's actually just a whole (slightly) different dish though. Pâte Chinois is a french canadian dish that is just similar to the english shepperds or cottage pie. It was meant to be a cheaper and easier version of it (to feed the railway workers in the old times).

    Great recipe, looks awesome.
    BUT: WHY AREN'T YOU USING A HOT PAD WHEN TOUCHING THE HANDLE OF THAT CAST IRON? My fingers were hurting for you!
    ALSO: It would have been so Lauren to bake the pie IN THE CAST IRON YOU WERE ALREADY USING! And easier. And more rustic.

    Soy curls work just as well with the same method. I rarely have the funds to purchase the mock meets especially the ones that I can make it home. If I'm going to go for a mock meat then I'm going to be looking at chicken tenders or fish less something along those lines. Also check steak sauces because I found one at Save-A-Lot that tastes just like a one and it's vegan accidentally!

    I make this using my leftovers, I usually have enough to omit any fake meats. And I always put mushrooms into it.

    The non beef beef is probably TVP. And there is nothing wrong with TVP I have it in the house and I can flavor it just like beef. Get some marmite and don't use a ton it is also good on vegan buttered toast with just a little tiny amount across the toast it is very savory. I have seen people test it with an entire Spoonful and that is why they hate it. I lived in the UK for 15 years and my Mite became my best friend. You can also add a gravy Browning to regular TVP to give it color and a little bit of flavor.

    It’s Wuster Sauce or Wustershire SaucE. FYI this is a Cottage Pie not a shepherds pie because it’s made with beef not lamb.

      In the States and Canada "cottage pie" is not a thing. We just have sheperd's pie and that's our version. English people have both so there is a clearer distinction.

    Youre cooking cottage pie not sheppereds pie. Cottage pie contains beef sheppereds pie contains lamb.

    I wish you would have shown us a recipe that didn't use fake meats and such. I'll probably use lentils and mushroom instead of the veggie ground... that stuff is too processed for my liking

      I make it that way and it's delicious. If you do use lentils and mushrooms, use garlic and onion powder. It just gives the mixture a little more zing. I also like a touch of Marmite but that's just me.

      They probably decided on veggie ground because it closely resembles ground beef which is closer to original shepherd's pie recipe. You can make it however you want.

    Shepherd's pie is vegan! Shepherd's pie always includes lamb/sheep meat.

    That's not a shepherd's pie it's supposed to only have peas and carrots onions mushrooms if you want them and that you don't have any gravy. It must have gravy of some sort it doesn't need to be swimming but it needs gravy.

      Kimberly Player haha! I saw it made go into the pan and go into the oven and come out of the oven in a clear glass pan and there was no gravy. I'm talking about something that pools a little bit. It might have made it moist but you couldn't see gravy. And I don't know why I'm explaining myself to anybody in the Yahoo comments.

      I saw it to you laughing idiot but it was not gravy! Gravy is not sauce and sauce is not gravy there is a big difference. And first of all you can't call it a shepherd's pie because shepherd's pie is made with lamb that's what Shepherds do they herd lamb. I am of Scottish descent and I lived in the UK for 15 years what is made in America is nothing like shepherd's pie and if you going to make it with a beef replacement and needs to be called cottage pie. It would be impossible to replicate a shepherd's pie because you cannot replicate the flavor of lamb it is too complex. You can laugh all you like little girls but you'll never be right when I'm around. Former executive chef Elizabeth md-phd specialized nutrition science and vegan.

      It's to show that you can still enjoy any dish as a vegan. People often associate veganism with sacrificing their favorite foods and dishes. Taking classic recipes and making vegan versions shows people that you can take any meal and create a vegan version of it.

      It's important to remember that ALL meat dishes are served in a way that makes them more palatable and easier to eat. A beef burger and a lentil burger are both man made ways to eat a particular food. A steak is really no more natural than grilled cauliflower, unless you're eating the meat from the animal raw with your claws and sharp canines...
