I had a question though i grew up with my family making potatoes and eggs, (fry up sliced potatoes in a pan add in a mixture of eggs, milk (eww) and parm cheese) I'm wondering if this batter would work in place of mom dukes eggs.. might be too "milky"! I need a good replacement for that. I'll give it a try though and see what happens. YAY I'm excited. Please do let me know if you have any suggestions. Thanks!
Jason Lam it is vegan- no animal product. Earth Balance uses sustainably obtained palm oil, it's up to you if you trust them on that and also your own choice to eat it or not. It is vegan though.

Great recipe ! I never thought of using nutritional yeast in something else than to get the cheesy taste ! Also in France we call this Pain perdu (Lost toast) because it's made for using bread that's too old, dry and hard to be eaten like that, so the eggy batter is softening it :)
In uk up north we call this eggy bread just mix egg an bit of milk ( I'm vegan now so just mix aquafaba bit of oat milk salt and a tad of tumeric ) and this put ketchup or brown sauce , I use to like Worcestershire on mine 😋
I made this yesterday--subbing kala namak for sea sal--and it was fabulous! I made it with the whole-grain sandwich bread on hand and it reminded me of the French toast of my childhood--great recipe! Thank you Chatelaine for bringing us this series!

Looks so good !! When i was young my grandma used to make french toast for me and i would just put cinnamon and sugar on it, or salt! Which i guess i could still do with this recipe since it's very easily modifiable for one's tastebuds

For me it's not french toast w/o cinnamon. I just made some last week, I just used a chia seed egg; Ill try the chick pea flour next time.
