No other online vegan chef has your language, when it comes to describing flavors! You really know how to ‘sell it’. I end up making more of your recipes than any of the others I see. They not only look tasty, they are beautiful and not overly complicated. Made your smokey chili oil for a friend for Christmas last year. They have advised me that they will not accept anything else…EVER! Haha. 🌶️

I do love your calm and straightforward instructions and enthusiasm for homemade meals. Let me ask a few things though, as one of the viewers and fans, who is dealing with a few restrictions. ( I personally, as a cooking enthusiast, - who always practices and trying to learn new things, can manage, - but maybe some are hard to overcome, but would love to enjoy your cooking and recipes. ) 1. Your chili oil is a wonderful creation for so many ways to add, develop flavor, but for those, who cannot manage the heat, or cook for children, elderly or with digestive issues, please give a “ lighter” alternative , where the flavor profile, might be similar or very close, without loosing the wonderful complexity of your dish, but lacks the extra heat.😊 ( Or can be added at their own discretion and tolerance of 👅 tastebuds/ tummy ) 2. When sugar or other natural sweetener is necessary to balance all the ingredients and complete a dish/ sauce, please suggest sugarless alternatives! There are millions of people in North America ( USA, Canada and I’m sure out of this range of your viewers) who might have dietary restrictions, or simply want to cut back on sugar consumption. Please, think about them! They all still would love to enjoy your recipes. Some are probably very resourceful, or willing to experiment, some prefer an other person’s trusted guidance, like you, to make sure, the outcome is still a successful, tasty dish! 😊 3. I know, and understand, that these recipes are traditionally or by your choice, and because of your culture and heritage are often paired with rice. 🍚 ( Or some forms of yummy noodles 😋) With respect to that, and not to change the integrity of your recipes, I humbly suggest, and ask if you would please consider providing some alternative options for the “starch” part of these dishes? What OTHER TYPES of grains, noodles ( brown rice, rice noodles , soba etc…) or just simple vegetables would work well with the recipe? That might help people with several dietary restrictions/ needs to still happily try, enjoy your recipes and be long term members of your ever growing community of enthusiastic fans! Oh my, that bowl looks delicious and the wooden spatula looks like my wooden gumbo spoon. I have lovingly made many Gumbos, and my wooden Spoon shows my work.
Love your recipes and their presentation, and have recommended your channel to many friends and family. The only difficulty here is that living in a more rural area I can not get lemon grass, many of the peppers you use, galangal, and even sriracha, and whole spices such as coriander seeds, cumin seeds, etc. Though I can’t exactly replicate some recipes, as a good and innovative cook, I make delicious compromises using your original recipe for inspiration. Great fun and great food.
Looks incredible, will try for sure. One question, though; when you bake the chickpeas in the oven, are they supposed to come out crunchy like peanuts, or still soft and chewy? Also, did I miss when the lemongrass needs to get added to the sauce? Much appreciated!
❤ I am really appreciating the chick pea recipes. I have an unnecessary amount of dried chickpeas and one can only eat so much hummus!😂 Also, I guess I'm making more chili oil for my girls as gifts this year. As gardeners, they grew having a great appreciation for Eastern dishes, as they lend themselves well for home grown meals. They love the chili oil. ❤
