It's not a common sentiment, but I have seen some people say they like Bacon more than Hass. They mainly feel that Hass is too oily and they like something milder. Sounds like the Pinkerton rewarded you well, after waiting so long for it.

Bacon taste best when harvested in late January to late February. If harvested in December and earlier, the flavor isn't there and will be watery.
