The look on your face says it all. It looks absolutely amazing. It's been a while since I've eaten some. My mooth's watering. I've got to make it. Thank you.
Hope you enjoy, Liz. I would actually add a tad more Whisky my thought. It was very subtle and not a huge kick. Lovely dessert indeed. Yes I enjoyed it very much. Best, Rik
Congratulations! Well done. Keep watching and take it in. Question what you do not understand, even if you think it's ridiculous! Good pastry chefs will always have a job. Take care. Thank you. Best, Rik had to edit this - I mean, keep watching where you learn.
I make this every year for Burn's Night in Austin, Texas, USA. I use a combination of whipped cream and vanilla Greek yogurt. I love that all the ingredients in this dish would have been available basically in the wild (berries, cream, honey, oats, and, of course, whisky) in 18th century Scotland!
You did our national dessert justice Rik 😋🏴, beautifully presented and as you stated, another wee nip of the ‘water of life 🥃’ & it would bring a glow to the cheeks of our national Bard Rabbie Burns himself! Gie him strong drink until he wink!😉😆😂 Cheers Rik 🥃 & thanks for sharing, you’ve got my mouth watering once again!👨🍳👌🏴
Oh my ... my Scots-Canadian gran used to make this and I never knew what to search for to get the recipe. This is on my "when the wild raspberries are ripe" list. There is a MEXICAN version! It uses fresh strawberries, "crema" (a sort of thick clotted cream), a soft cheese (much like ricotta), honey and - amazingly - toasted rolled oats soaked in dark rum. I forgot the name of it.
Years ago I made a cranachan cheesecake for a Christmas dessert, it was awesome. Thanks for the video.. I used oats and butter for the base of the cheesecake and the cream and cream cheese with the honey and raspberries in the mix, and a light drizzle of honey on top as flourish / garnish. The whiskey was also in the cream cheese mixture.
I love all these traditional British Isles recipes! So much simple, nutritious deliciousness! And I bet this would also make a great winter dessert by substituting whole cranberry sauce for the early summer raspberries.
I grew up picking raspberries and strawberries from the farms just outside Brechin in Angus during the school summer holidays. The money we made all went to buy our school uniforms for the next term. Sadly all the berry fields are long gone now, as they all use polytunnels these days. Looks fab Rik! 👌😀🏴
When I worked in a hotel in my teens we had a wonderful pastry chef and this was one of my favourites. She used to make a caramel then add the toasted oats and after spreading it out on a tray she used to break it up so it was in small crumbs. She would mix the cream cheese with a little yoghurt as well as cream and use the honey and whiskey in that and layer with the raspberries. When she did the layers of the caramelised oats she added a touch of whiskey too. It was always a best seller on a Sunday..
That looks so decadent and delicious and a good healthy portion I see Rik I bet it makes a lovely change from English trifle , I love fresh raspberries they always remind me of picking them from my grams garden as kids , thank you great recipe again Amanda xx
Yes a good portion indeed! Lovely dessert this. I remember getting all those little cuts on my arms picking raspberries. Good times. Thank you as always. Best, Rik
My first time seeing this dessert and will definitely give it a go. This looks like a type of heavenly dessert that would bring the dead back to life for a little longer stay!
Amazing! Being a teatotaller (American), I made this, substituting cider for the whiskey. Had just splurged on some fresh raspberries... and then this recipe appeared. Delicious! Great combinations of contrasting tastes and textures.
Rik - thank you for creating a Scottish Cranachan and making it be such an uncomplicated but delicious dish! A 'bit more" of the water of life would probably be even better!
Made this once before from a recipe found on a Burns night recipe site. Oh myyyyy. I use whipping cream/mascarpone mix. Now, im craving! Thank a LOT!!!😊❤
Cranachan, in my humble opinion, has to be the ruler of all puddings/desserts. Though to be honest whenever I make it I just use whipped extra thick double cream, raspberries, toasted rolled oats and honey. I don’t generally bother with the crowdie (which can be easily substituted with ricotta) or the whisky (I’m generally not fond of alcohol in my food) though…which I suppose some would think makes me less Scottish but I don’t really feel that the whisky especially is needed, though it can add an earthiness and familiarity (especially if you’re using a whisky distilled either locally to where you live or where you grew up). It surprises me every time I have it how light and fresh it tastes and feels…and is so ridiculously moreish.
I have a feeling my dad will want to me to make this pudding for him when he's visiting mine again! He's addicted to your channel now 🤣. My parents take their neighbour Shirley shopping on a Saturday morning, and afterwards they all have a coffee and my dad shows Shirley your channel and they discuss how nice your food is. If you don't mind, would you please say hello to Brian, Avril and Shirley. It would make their day 😁 Thank you!
@@BackyardChef He likes making soup. Butternut squash is a favourite along with a rustic vegetable soup. He is also a big fan of a nice curd tart or spotted dick pudding. Thank you 😊
Thankyou so much for the video & recipe of that awesome dessert Rik, very much appreciated, just to let you know that you forgot the cream cheese in the written recipe. I will definitely making this again as it's definitely a top ten or even maybe tope 5 dessert for me, I do love the mall though. 😋

I'll try to make this. I can''t eat oats. But I could substitute hemp hearts. Seventeen grams of carbs in one teaspoon of honey. But I can use tahini in place. What the hell, I might just drink the bottle of whiskey and tell myself I made the Cranachan and it was delicious. Cheers. 😀
I've GOT to try this!! My hubby is Scottish. We named our son "Scott". My husnad used to adk his father "How much Scottish are we pop?" Dad works say, "Don't worry kid you're a 100 proof!"😂 Any kind of whisky, or is there a best one to use?

@BackyardChef The whisky is ideal added to the oats. Some people can be put off with the oats. You've made a master piece.
Wow! That I will take from a dessert up there in your neck of the woods! Thank you very much! Best, Rik@@lizhannah8412
@@BackyardChef Nae bother, pal.
Lovely, I am a pastry student and in my contemporary arts class I made a deconstructed Scottish Cranachan. I got a 100%.
