•Cinnamon Sourdough Discard Muffins-
___________________________________
•1/2 cup milk
• 2 eggs
• 1 cup discard
•1/2 cup sugar
•3/4 tsp salt
•1/2 tsp baking powder
• 1 tsp baking soda
•1/2 tsp cinnamon
•1 1/2 cups all purpose flour
Topping-
•1/2 cup flour
•1/2 cup brown sugar
- 1 tsp cinnamon
- 3TBS butter crumbled
•Sourdough Discard Tortillas-
__________________________
•1/2 cup discard
•1/4 cup olive oil
•1/3 cup warm water
•1/2 tsp salt
• 1 2/3 cup flour
•Sourdough Discard Cheese Crackers-
__________________________________
• 1 stick of butter crumbled
•1 cup flour
• 2 TBS Parmesan
•8 oz shreds cheddar
•1/4 cup discard
•shake of rosemary
•1tsp salt
•Shakes of garlic powder
•1/4 c water
Brooke, I love your videos. One suggestion that I use, I spread my discard very thin on cookie sheets and dry it until brittle. I break them into pieces and store in a mason jar. I have one jar that is over 20 years old. To activate it you soak it and treat it as base and feed it use as needed.

@@SouthernFrugalMommaplease try the gallon size zip lock bag. Just make sure you get the air out and zip lock the bag. You just roll and squeeze the bag to mix it as you feed it. No discard and no mess. I do it all the time.

Brooke, I've been baking with worth for heading two decades, now. It might interest you to know that I don't keep my sourdough starter in the fridge and I DON'T have any discard!
The only time I ever had discard was when I was establishing my starter.
But at least for the last 10 years, I don't have any discard!
My sandwich loaf recipe calls for 300g starter. So on baking day I have around 350g type starter to use. That leaves me 50g. I always feed it max 1:1:1 by weight (starter: water: flour) so now I have 150g.
Day 2 I feed it with 100g water and 100g floor to have 350g...
Day 3 I repeat day 1...
Now if I want to bake a cake or two or more than the single loaf, I take an extra day or two and keep the 1:1:1 ratio going and I'll have what I need.
It means I need to plan a few days ahead, but after a while it becomes second nature and you never have any discard and you never have to worry about your starter going surname in the fridge - it's always being fed and cared for and highly active. ❤️

Back in the 1970’s, my mom was given a starter called “Herman”. That stuff made THE BEST pastries/coffee cake!

Mine is named Dolores (as in dough-lores 😌)
I used to have “Herman”too back in the day. Made the best bread type things muffins, pancakes , biscuits etc.

Try rolling out your cracker dough between 2 sheets of parchment. This makes a thinner cracker. Remove the top sheet, cut your crackers, and then just place the bottom parchment with the cut crackers on a sheet pan and bake. Always love your videos and your creative recipes!

Hi Brooke, I've started experimenting with sourdough in 2020, and there's ways to do it without discard, which I learned from how Jack from Bake With Jack does it. He also keeps his starter in the fridge and I can go weeks in between feedings like this! :)
I can attest to that. I've literally gone 3 months without feeding mine when I was just too busy to make things with it. A double feed later and presto ! Ready to go

Discard is not meant to be thrown away. Only discarded from the starter.
I throw mine in a bag in the freezer. I add bits of it to boxed cake mixes, etc.,
We are only a family of four there's no way I could keep up with discard recipes.
I am already a lover of carbs and eating WAY too many. I don't need any more!😂

Brooke if you need a quick breakfast or dessert I used my discard to make "crepes". I just took my extra starter added an egg pinch of salt and a little sugar. They were so good. I used different stuff as fillings, cream cheese strawberry, Nutella strawberry, cooked cinnamon apples etc. It's quick and simple. I'm going to have to try those crackers they looked yummy!

I use the scrape method. I basically keep a very small amount in the refrigerator until I'm ready to use it. Then I take it out and only mix up just what I need for whatever I'm making. There are only two of us so I didn't want all the discard. It works perfectly and I've left it in there for more than a few weeks. It always gets nice and bubbly!

Here's a trick that might help you. I use this myself, start your sour dough starter in a gallon zip lock bag. You can mix it by just using your hands outside the bag. And everytime you add to it just mix it with your hand but make sure you close the bag. Just roll, squeeze and work the zip lock bag you will find you will not have discard and you have enough to make 2 large loafs of bread after you rebag another gallon size zip lock bag. I promise you will be happy you try it.

I know you probably know this, but tortillas freeze really well. If you have a bunch of discard and a free day, you can always make a bunch of tortillas and freeze for future meals or gift to family. :) Great job!

Pancakes with yeast are so dang yummy. That is what makes The Original Pancake House so delicious.

Make baskets, freeze them dubble bag them so they don't get freezer hard. Nook them when you want one or many.
You need to watch our tribe of many Sarah does heaps with sour dough. She make pizza out of it. Xx you can use it for waffles. Make a heap of pancakes and freeze them.

Amish Friendship Bread starter & Herman bread starter recipes would be good places to get ideas. You might have to make a few changes because Amish Friendship Bread & Herman starters can be milder & sweeter than a traditional sourdough starter.

Brooke if I lived by you I would take some discard. I don't know anything about bread like this but because I don't typically ever eat a loaf of bread by myself in a month having something I could just pop in my multifunctional air fryer I could make bread bowls for soups and dips for gatherings and I could make Navajo bread which is awesome or make a fake chalupa wrap or pancakes and freeze them for a breakfast on the go sandwich similar to a m griddle.
These muffins look so good but I always thought you used self rising flour for crumble??!! I also have been reading up on dough and bread recipes and am reading up on sour dough also for about the last month!! I haven't ventured into making starter yet (mainly because my fridge gets a little too cold but if I bump the temp up to the next level then it gets too warm ??? Gotta read some more or figure out this fridge!😮😊

Sourdough discard sandwich bread
100g sourdough
250g water
500g AP Flour
10g salt
20g sugar
60g butter room temperature
7g yeast
Bowl of stand mixer
Combine sourdough,water, and flour
Mix until well combined
Rest 30 minutes
Add salt, sugar, butter and yeast
Knead 3 to 6 minutes
Let rise until doubled about 1 hour
Shape - grease pan
Let rise
350 degrees 40 to 45 minutes
Thanks for the sourdough discard recipes. I was trying to decide what to do with mine this morning so timing is great. The recipes look great and I am anxious to try them. I have been having difficulty with finding recipes that taste “almost normal” and tasty since mine has to be gluten free. It’s been difficult and a bit discouraging. So thanks for the recipes to try!!!
Sour dough discard pancakes and tortillas freeze beautifully. You can make big batches of them to use up a lot of the discard. Just freeze it and you’ll have some meal prep done as well.

You can roll the cracker dough directly on the parchment so you just put them on the baking sheet. Easier. All your baked goods look good. I’ll have to try them. I have a lot of discard too.
It access sour dough bread access dough, not access cracker dough!
You can always just make is smaller as well like use a teaspoon instead of a tablespoon when starting a sourdough and feeding
(Sourdough )crackers- butter crackers- brownies- peanut butter cookies. Just put the sourdough in front of it when googling recipes!!!

Some people don't even discard, some do others break all of the rules so it makes it difficult. You end up with several starters to see which one you like best.

All those looked so yummy! I would try to roll the cracker out a bit thinner to have them a bit more crispy! Or leave a bit thicker and cut a bit bigger and use as a biscuit or scone!! So many things that you could add to the muffin! As for the tortilla add a finely grated jalapeño or chili pepper to add more flavor. Love your videos!
