    Eggroll in a Bowl Recipe:
    1 vegan veggie burger
    cooked rice
    1.5 cups shredded cabbage and carrots
    2 tsp olive oil
    2 tsp lemon juice
    salt and pepper to taste
    Directions:
    Cook the veggie burger and then crumble into small pieces. Warm up the rice and add it to a bowl with the burger and top with veggies. Drizzle olive oil and lemon juice on top. Season with salt and pepper, mix well and enjoy!

    I love the cereal tip! Cereal by itself has sort of a "bad reputatation" for high sugar content and low satiety but if you power it up with seeds, nuts and fruit it makes a great breakfast. They key is to choose a cereal with good ingredients. Thanks for sharing!

      Exactly! I avoided it for years because I thought it was "empty calories" but I no longer believe in that term. I think it plays into the idea that some foods are "good" and some are "bad" and I try to avoid that diet culture mindset. Instead, like you said, I think it's much more important to focus on eating real food and just create balanced meals with simple ingredients. Cereal bowls like the ones you described can be so nourishing and satisfying when prepared this way and I'm glad because I love cereal lol Glad you can relate to this 😊😊 Hope you have a great Sunday!

    Almost all whole grain cereal is actually very high in fiber and high in protein usually roughly 15% protien and 12g of fiber per 100g
    Also I'd like to mention that Catalina crunch is the most processed cereal I've ever read the ingredients on almost all the ingredients are highly processed While cereals like cinnamon toast crunch, frosted flakes, lucky charms, cheerios ... all have the first ingredient as a whole grain . Not the best breakfast foods but considering they are often considered "processed junk"

    Omg Nikki! I LOVE that you partnered with Catalina Crunch! I use these cereals for so much more than just eating with milk! The dark chocolate one can be made into high protein “puppy chow” (aka muddy buddies)

    I know I'm a long-time viewer of your videos because I've made a version of all of these meals at some point. 😆 I was obsessed with the loaded cereal last summer. Like, I ate it for at least 2 meals a day for a whole month 😂

      Thanks Mel! I love that mac and cheese recipe! The trick is to make sure you cook all of the moisture out of the mushrooms before adding the crumbled tempeh bacon to the pan. That way it will crisp up and become like bacon bits 😊😊 Hope you enjoy!

    Great meals, Nicole. These are on my rotation as well. Can you advise me about this? I'm so discouraged. Before I went vegan, I ate low carb/high protein (meat) meals. It really kept me at a nice weight. Now that I'm vegan, I have gained 12 very unwanted pounds. I eat whole foods...all veggies, legumes, fruit, whole grains, nuts and seeds. I feel good, but I'm very disappointed by the weight gain. When I cut back carbs in my diet, I'm not satiated. Also, I don't go overboard on the nuts either. Am I the only vegan who struggles with this?

      Hey 😊😊 Here's some of my favorite lentil recipes to try: Lentil Meatball Subs nikkivegan.com/the-best-lentil-meatball-subs/ "Beef" and Pickle Tacos nikkivegan.com/vegan-beef-and-pickle-tacos/ Nourish Bowls: nikkivegan.com/rice-and-lentil-nourish-bowls/ Veggie Burgers nikkivegan.com/beet-and-walnut-veggie-burgers/ Red Lentil Tofu nikkivegan.com/red-lentil-tofu/
      Just make sure you're using the right color lentils for recipes because some are split (like red) and some aren't (like brown) Red are great for dal and curry because they're cook down and get creamy but for other recipes, you want to use a whole lentil so it holds it's shape and doesn't get mushy 👩🏻‍🍳 Hope you enjoy!

      @@Ella.L. Dangerous working conditions for their factory employees, and union-busting and a factory closure after the conditions were reported. I had supported Amy’s since the mid 90s but stopped buying their products when this came to light. There’s plenty of articles and info online

    Your recipes look great, but please note that nutritional yeast provides protein and certain B vitamins, but it does not provide B12 unless it indicates that it is "fortified".

      Thanks Mike! My favorite sour cream replacements are Kite Hill's unsweetened plain almond milk yogurt, CocoJune unsweetened plain coconut yogurt and Simple Truth Vegan Sour Cream (from Kroger) 😊

      I put them in a sieve or colander and rinse them under the sink. Gets rid of any debris ❤️❤️

    Idk...not adding sugar but stevia and calling it 'sugar-free' is like adding tomato and calling it 'fruit-free'.
    Also, nooch doesn't contain absorbable B12, guys, don't lower your B12-pill intake just because you eat nooch.

      Oh yeah I always take my multi vitamin which has b-12! So important, especially since some days I'm eating b-12 fortified foods and some days I'm not so taking the multi everyday covers my bases 😊😊
