    Don’t worry about using Walmart brand stuff. You keep doing these recipes for us and the more expensive stuff would add up quickly! It’s not fair for anyone to complain about it. They aren’t eating it. If they choose to use a different brand that’s their business! I bought aldi almond flour for like $5 or so. My grocery store wants minimum $20 for the other brands! So far I’ve made a bunch of things but only one was almost edible soooo I make a $2.50 mistake not a $10 mistake! 😂

      I’ve got no problem with your rhetoric. Our problems stem from those who can afford to but refuse to buy goods that are sustainable, reusable, made in America , for the good of the worker etc…. Manufacturing has been outsourcing forever. Walmart is a juggernaut of industry and, while I agree that there are problems with it all…. The industrial “revolution “ that is taking place has happened because large corporations “trickle down” effects don’t work and they aren’t sharing, allocating for the betterment of the world/workers/environment. Think of those who hold wealth now…. They aren’t producing goods to aid humanity. ( Kellogg invented cereal grains to help those sick from eating unrefridgerated meats, American cheese gave sustainable calcium cheese to troops in WW) today, Their products like social media platforms serve to make them rich. Meanwhile, advertisers pay for user data making them richer. They do not add to society only to the ills ( self esteem, paranoia, data mining, scammers, snake oil salesman, ppl who pick fights with strangers on a keto dorito video). And they pay no taxes, in fact I just read a company had a $400M + REFUND on their taxes after not paying a dime. It’s not just Walmart but many ceos who feel that every dime belongs to them and only them.
      Dude, I’m gonna buy what I can afford. I have to use alternative/GF flour. $5 it is.

    If you spritz the chips with a little oil and air fry they taste like fried. I bought a spray bottle for oil, that way you don't get too much oil.

    FYI lots of us keto people are poor and go to Walmart and Kroger. The people who push expensive brands don't understand that. Love the videos. You're doing great with the variety of recipes!

      If you are buying groceries these days… you ain’t poor! 🤭 You are just grocery poor! Anyone who pays $20 for the same item they could get for $10
      Is foolish… not very smart in my opinion! If your family is on assistance (food stamps, it is called here in NC) they are getting 1/2 of what they did before for their food stamp dollar! It’s crazy so let’s just let everyone buy what is smart to buy and if you can buy a healthier something because it has 10% less salt… good on you! Leave our Dave alone!

      I'm not "poor" but I refuse to pay some of those prices. For anything! If I'm desperate to have something, I'll shop around until I find an acceptable price. Sometimes you can find Keto products in the "reduced price" basket at the rear of the store. Ketogenically illiterate people aren't smart enough to buy it.

    Tip to stop parchment paper from curling on the countertop is to wet the countertop, then place the paper on top.
    Tip #2 Maybe pricking with a fork before cooking will prevent puffing up. Not sure, just a thought!

    The Keto diet is the best, reversed my moms type 2 diabetes and soooo many other health benefits. My husband used to love Cool Ranch Dorito's, but now he eats Carnivore and is back to high school weight. I may make these for a special occasion. I plan to fry them in tallow, though. Ty, this looks amazing ❤

    Don’t beat yourself up is right. I was Leto/ carnivore for almost 2 years when I got cancer and the chemo affected me badly. I ended up eating rice and crackers bc it was all I could keep down and I went off my diet for almost a year. I’m back on now again and feel wonderful and myself once again. If you let that guilt trip you up you can’t just get back on that keto wagon again so easily. Good for you.

    Form ur dough into a circle mound then press out.. easier cutting of the chips

    If there's less than 0.5gr of a macronutrient power serving, it can be listed as 0g. So if it has 0.4, and you eat 4 servings, it's actually 1.6gr, not 0x4. It's sneaky.

      Sure, but you use xanthan gum in such low quantities its still going to be close to 0. He used a double so lets say its worst case and .49 so .98 grams across 100 chips, of .1 a serving.

    Wad the parchment paper Into a ball, then flatten. Works like a champ. Also, prick the dough with a fork to reduce the puffing.Keep the good times rolling with more recipes.

    Rule of thumb for Air Fryer: fryer temperature needs to be lowered 10 percent on the original oven temperature.
    So 200 degrees Celsius becomes about 180 .
    and then cooking time about half the regular time plús 10 percent of the original time. So 40 minutes in half is 20, plus 4. Start with 24 minutes and see if its cooked properly. That’s how I learned to use an air fryer.

    Vacations can be a challenge. I make a lot of pre-made meals and snacks. Preparation is the key to success.
    And…don’t share with those who won’t appreciate what you have and eat junk anyway. That is being practical, thrifty and definitely not selfish.

    Thank you for the cool ranch episode, those look great just like the cheesy doritos! It's been my experience with air fryers that you have to reduce the temperature on smaller batches since there's less food to heat up - basically less volume needs less heat to cook due to the convection action of an air fryer. Great job with the cheese cloth!

    Another way to drain the cottage chees is to drain it in a fine sieve over a bowl. You won’t lose as much of the cheese. Enjoy your videos

    Fold up the edges of your bottom parchment paper and then roll the dough into the folded edge - voila! Easy straight edges. These look yummy! You can spray oil onto the chips then airfry at a little lower temp - gets closer to that deep fried texture... thank you for helpful chip dough recipe!

    Honestly, its super easy to be keto. Some people like to put too many rules on it, and are harsh because you are not doing it "their" way. The first time I went keto, I ate a ton of foods that are deemed not keto... like diet soda and sugar free packaged foods. I just made sure I stayed in my macros. And I stayed in ketosis, I got the test strips to verify. Your keto journey is your journey. I love your videos, I have found so many great recipe ideas!! Thank you for sharing, and for being yourself! Keep up the awesome videos!

    One way to make more even triangles is to first use a bowl/lid or large circle cutter and then cut it like a pizza. I realized this after making chips out of tortillas.

    Cheese cloth is great to use in kitchen. You can rinse off and wash in washing machine just don’t put in dryer; let air dry. Fibers get tight and won’t strain if put in dryer.
    Or wash by hand and let air dry.

    Xanthan Gum is definitely low carb.... it is used in most keto recipes to thicken it. BUT it can become gummy/slimy if you use too much.... at least in my experience

    I might be mistaken, but as I understand it, Xanthan Gum is extremely high carb, but that carb is all fibre, meaning it's zero net carbs. Additionally, it's used in such small quantities as to not matter.

    I use my air fryer frequently. I don’t know if it would work, but perhaps you could spay a little avocado oil on the chips and cook them for two minutes and add an extra minute if needed. Thank you for the time and effort that you out into your videos.

    Oooooo! Try cottage cheese regular potato chips using OOO Mashed Potato Flavor Concentrate! Don’t let the smell deter you. That stuff is awesome! I add it to my Cauliflower faux mashed potatoes.

    With your biscuits and gravy, try Country Crock Plant based heavy whipping cream, works well, zero sugar zero carbs. I use it in soup recipes sauces and gravies. Whips beautifully too. Allergic to dairy and this is the best substitute for all Keto recipes calling for heavy cream.

    Xanthan gum is absolutely low carb! I say, it's a MUST in every keto cook's kitchen. It does so many things.... great as a thickener and, for many of your baked goods, a stabilizer. 5:51

    When using psyllium husk powder you need a little less than when using the fiber. It is more absorbent than the fiber and can cause recipes to seem like you don't have enough liquid.

    If you are going to get the liquid out, then just put 2 Tablespoons of coconut flour in it. That will absorb the liquid. Or put extra Isopure.

    hi Dave, I love all your recipes. I think they are awesome and believe it or not I have actually learned some things from you which is great and I find when you strain cottage cheese it’s better to leave a little liquid. I find that my product ends up a little too dry and I usually end up having to add some liquid to it and to me that just means that the cottage cheese was strained too much so give it a try I think you’ll find it a lot better. You just don’t want it look like it’s dry. You still want a little bit of moisture in there, looking forward to more great recipies 😃❤

    I recently swapped from that exact air fryer, and the difference is stark in cook times compared to recipes went away. The fan isn't the only aggressive thing; the basket is directly under a whole electric stove heating coil. It's not so much an electric fryer as it is a small scale convection broiler.

    Hey! Love watching your videos and I noticed that you don't use the handles on your rolling pin, is that intentional? Also where did you get that rolling pin, I need it in my life. Thank you! OH!     I wonder if Farmer's Cheese would work, but it might be difficult to find these days. It's a dry form of cottage cheese that a lot of people here in upstate NY used for home made pierogi. It's a bit salty, too.But doesn't need straining.

    You can use clean tea towels too and they can be found anywhere in even the dollar store, no cutting just throw in the wash and reuse.😊

    Next time, try the air fryer again, but this time spray the chips first with Pam olive oil spray before cooking. A mist coating of oil may make them taste a bit more like "fried"

    The easiest way to do this is buy a tortilla press. Make dough balls... squash them.... Cut your little circles into triangles easy-peasy

      @@brixmortar I wonder if paneer would work as well, since it is pretty crumbly and dry. Serious Keto did a tortilla recipe a year or so back with a fathead type dough he did with paneer instead of cream cheese and called it panhead dough.

    To make you parchment paper fit the cookie sheet better make a small cut at the four corners of the paper.
