the only thing that's a little "bad" from this, I think (but I'm not an experienced chef at all), is that he kinda rolls it a little bad but it's whatever. I'm sure it still tastes great. i don't think jacques pepin would think this was unskillful or something, but then again I don't know him. most irritating thing about this video is all the inserted commentary from the other people while Geoffrey is explaining what he's doing

You don't need to add butter. I use an emulsion blender, 3 eggs, butter and olive oil...medium heat on and off the flame....comes our amazing no brown just nice and pale...soooo good
Don't know why- she didn't do much work as GZ's sous chef. Just mixed together the already portioned out ingredients for the vinaigrette. But, but, but!!! I'm sure she had her fork at the ready for the first bite!!!😀😀

i pre salt my eggs, ive found that it doesnt do anything for the taste... but it definitely for some odd reason makes it more tender i guess. the omelette comes out better.
iiirc it depends on what kind of dish you're making. in french omelette it is arbitrary to put the salt before cooking. salt makes the consistency of the egg really thin which is preferable to achieve the fancy French omelette looks.

This is one of the shows that I don’t care for from Food Network. I honestly don’t like any of the host chefs on there... and they don’t have a real variety of guests. Before anyone gets offended, to each their own.... but if you watch a few UA-cam chefs just putting themselves out there it’s way better content. As well as the ones that travel such as Mark Wiens, SUNNY from Best Ever Review Show or The Food Food Ranger... and you have Andrew Rea with Binging with Babish and Bon Appetit

He didn't whisk the eggs enough, temperature was too low, and he took way longer than needed for a French Omelette. As other have mentioned, check out Jacques Pepin's video on how to make a correct French Omelette.

This is the best way to cook an egg... however for those at home... don’t cook it this way. Use two to three eggs with about a tablespoon of butter to egg ratio. Keep the heat medium low, whisk it to small curds using a figure 8 motion while also rotating the pan to keep it from cooking too well. This is supposed to be very soft and custard like in the middle. It should also roll much better than what was shown, he used too many eggs for it to come out as a cylinder shaped. Search for other recipes of this on UA-cam. Maybe food wishes or chef peppion. Good luck, easy but difficult to master. Well worth it. Serve with crem friach and sour dough garnished with chives.
That's fine for him I guess but I wouldn't allow my assistant to be laying all over my counter. Then she wipes the spilled cheese right off onto the floor..
It messes up the protine structures of the egg and creates horrible eggs where you get all that clear liquid leaking out of it. They dont cook properly. The eggs steam from within because the excess water in milk and create rubbery texture rather then the creamy smooth delicious texture the eggs should have.
@@goldenron1088 if your going to add anything to eggs add it 3/4 of the way through cooking (obviously not milk it's too watery) but at that point add butter, cream, sour cream, or even plain Greek yogurt for an even creamier egg. But it should be done right before the eggs are cooked. Not at the beginning

Serious Eats did tested when to salt eggs and they preferred pre-salting the eggs. It's a preference thing
