I’ve always had this weird fantasy of opening a food truck called Pesto. So many sandwiches, pizza, pasta, meals can be topped with pesto. So many variations of pesto can be made. It’s such a beautiful compliment to most meals.
It’s so expensive. Even though I grow my own basil, it cost a lot for the oil, the Parmesan cheese, and whatever nut you choose. I personally choose walnuts, just because after trying a variety of different nuts, I prefer the flavour of walnut.
I’m from India, i made it with cashew nuts. I was lucky to have a bottle of top quality olive oil from Greece. It was too yummy, my whole family including my grandmother loved it.
I saw a great tip about freezing pesto - pour it flat onto a cookie tray between 2 sheets of baking paper (parchment), then cut the frozen slab into 4 and put them into a plastic freezer bag (still with their sheets of paper) then you can easily get as much as you want - sometimes you just want a little chip to put as a garnish onto some soup etc etc. It really works and is a better way to freeze it IMO! Either way, you're right - it freezes really well which is lucky cos I grew a heap of basil. I LOVE pesto!
This video made me get into farming my own little garden. Started with Genovese basil which I didn't know is so easy to grow here in the tropics, they grow like weeds and now I have an endless supply and pesticide free basil, they grow so fast I have more than I know what to do with the rest. With Italian parsley, I have little luck, many did not germinate and the handful that did is still at 4 inches tall like they are stunted for a month now. Tomato Roma, I have better luck, they are now flowering, hope they taste good.
@@jamies5503 Sunlight and trim the tops when you harvest, just make sure you trim above some new sprouts along the main stems so they make new main stems, this will make it bushier and give it more leaves to grow on.
Thanks for teaching me how to cook like an Italian! You've inspired me in the kitchen so much over the last 12 months. We have our own basil growing in plantar boxes and get the good pasta now. We often make your basil sugo every week.

Here is a recipe from the Blue Ridge mountains for back yard pesto... 1 cup dandelion leaves, 2 plantain leaves, two lemon mint leaves, one clove wild garlic, 1 to 2 tbsp feta or Parnassian cheese, 1/4 cup olive oil, 1 tbsp walnut. You can add parsley and basil if you like. What I love about pesto is you can create so many flavors together. Just add what you like. I loved this video.

I love this pesto with spinach and penne or fusilli pasta. It’s great with dry tomatoes, nice substitute of meat beacause of it’s texture. I like to use walnuts instead of pine nuts.

You probably have not tried it with pine nuts, but do you think it tastes the same? I don’t have any pine nuts but have cashews and almonds in my kitchen 😊
@@mawiewamos haha actually I have tried it from pine nuts, basically the first time I realized I was allergic to pine nuts was from eating pesto in a restaurant and having a reaction to it (so not really going to remember the taste from that since I was just focused on how I felt). But between cashews and almonds I prefer cashews over almonds. I think almonds have too strong of a flavor compared to cashews and this competes with the taste of the basil too much whereas with cashews I get more of the taste of the basil coming through.

My daughter found your channel yesterday. We’re buying pesto Basil at our local Calif market because tomatoes sauces have caused Acid reflux from tomatoes. I use to have a garden grown tomatoes so sweet….no issues with acidity from tomatoes at that time. Ragu, Prego, any sauce is now unavailable for me… due too gastrointestinal issues. So a dear friend who has the same acidity from tomatoes sauces told me he is cooking with “Basil Pesto Classico jar sauce. I tried it… I’m in love again I’m back enjoying my pasta, rice and corn gluten free, pasta, wheat spaghetti pasta, with olives sea salt preferably instead of tablespoon salt. Hello Vincenzo - thank you for inspiring! I made your pesto - I didn’t have nuts on hand, so I used sunflower seeds - after blending it all up, I put it on a bed of shredded cabbage - I did also add lemon juice and I gotta say, I loved it!!! Thank you, I’ll be making this from now on!

The only dish my Dad ever complemented me on was my pesto, I used Massimo Botturas alternative of using toasted bread crumbs instead of pine nuts. I also added a shot of my homemade limoncello :)
I like watching you, cheers me up to see someone so passionate about cooking. What I do with my pesto is I make it while Basilica is in season and then I freeze it in large ice cube trays. Once they’re frozen I put the cubes in a Ziploc so that I can enjoy my pesto all winter long.😊. I’ve never tried it on salmon, but definitely on pizza and in pasta, i’ll look for your recipe to cook it with my salmon. Thank you for the video, it confirmed that what I’m doing is correct, ha ha.

I love it, pesto is the easiest, tastiest pasta sauce. And as there is no home without a mortar (molcajete, from nahutl), I just did it the old way. It was amazing and creamy, except I used queso enchilado, dry, crumbly and salty cheese instead Parmigiano and chilly flakes instead black pepper.

In the Philippines, we use pesto with a local bread called "pandesal" which has soft, crispy crust, airy or pillowy popularly served at breakfast. You toast the pandesal, layer it with what is locally called "kesong puti" or a white cheese made from carabao's milk, then the pesto and topped with a salad tomato. Totally yum!!!

The two nice basil plants in my garden are ready & I’m on it! I’m using pistachios and Romano as well parmigiano. It feels like a pasta day but I also like it on pizza as well.
Always enjoy Vincenzo’s videos Couple of suggestions ... not all basil is good...even in Genova , we generally have to visit several shops before we find the best for making pesto Also, the locals like to use Sardo cheese , or some blend Sardo and parmigianno Lastly, in Genova you will find the pine nuts added to the blender last,,this gives coarser chop to the pesto and a more delicate mouth feel to the palate. You want to taste the pinioli Really enjoy your passion and energy in making these videos... and we can always learn more Respectfully
Something else that works good is to actually heat up the oil with the garlic to infuse the oil then let it cool to room temp before continuing. It really increases the depth of the flavor.
Thank you for your amazing recipe! I used to buy the pesto at a shop. I liked it, but the pesto tasted a bit sour to me. Before watching your video, I tried making pesto only with basil, oil and salt because I didn't have pine nuts in my kitchen. As soon as I get them, I will try authentic pesto. It's so addictive to make pesto with fresh basils. The fragrance is out of the world!
As always, Vincezo is amazing. I love how relaxed he is. Just made his tomatoe sauce today actually. When I lived in Greece, I would use Greek walnuts instead of pine nuts and Kefolatiri cheese (pecorino) and substitute half the basil for parsley. Both basil and parsley grow wonderfully in Greece. The colour is amazing and it's a great alternative and worth a try. It's is actually my go to pesto now but you can't beat the real deal, beautiful shown and demonstrated here by the lovely Vincenzo! I love your recipe. I make pesto all the time. I put it on everything. Sometimes I add other herbs and nuts. Or use more olive oil to make pesto mayonnaise. Always in the fridge.
vincenzo, loved the video. pesto is one of my favorites. i remember my grandfather buying the pignoli nuts from the salumaria when i was a kid. i would eat almost all of them and he got pissed lol. he used them for pesto as well as making the pignoli cookies as the italian bakery would. would you have a recipie for pignoli cookies?
Ive made pesto before and it always turns out amazing. This time, took your suggestion and i roasted the pine nuts. One word: Incredible. I did not think it would make that big of a difference but boy oh boy, out of this world. I can drink it 😂

OMG! My favorite italian sauce of all time. Long live basil - yum yum yum. I made it once a long time ago and ate a quarter of the contents in my food processor. My girlfriend told me to stop or it would have been history.
After checking the basil for insects, a salad spinner will remove a lot of the water. Love your videos, Vincenzo! I plant basil, and after a good cutting for pesto, the plant doesn't have a chance to flower and it will keep growing.
This is one reason to why I love Italian food so much,. Simple and if done with good ingredients it really is the best.

By the way, it isn’t that fast to make simply because you do have to remove the stems from the basil plant lol that takes some time
Salad spinner is great to use to dry your basil. Also, I tend to make a 4 cups of basil recipe at a time.

Hello Vincenzo - thank you for inspiring! I made your pesto - I didn’t have nuts on hand, so I used sunflower seeds - after blending it all up, I put it on a bed of shredded cabbage - I did also add lemon juice and I gotta say, I loved it!!! Thank you, I’ll be making this from now on!

The only dish my Dad ever complemented me on was my pesto, I used Massimo Botturas alternative of using toasted bread crumbs instead of pine nuts. I also added a shot of my homemade limoncello :)

I like watching you, cheers me up to see someone so passionate about cooking. What I do with my pesto is I make it while Basilica is in season and then I freeze it in large ice cube trays. Once they’re frozen I put the cubes in a Ziploc so that I can enjoy my pesto all winter long.😊. I’ve never tried it on salmon, but definitely on pizza and in pasta, i’ll look for your recipe to cook it with my salmon. Thank you for the video, it confirmed that what I’m doing is correct, ha ha.

I love it, pesto is the easiest, tastiest pasta sauce. And as there is no home without a mortar (molcajete, from nahutl), I just did it the old way. It was amazing and creamy, except I used queso enchilado, dry, crumbly and salty cheese instead Parmigiano and chilly flakes instead black pepper.

In the Philippines, we use pesto with a local bread called "pandesal" which has soft, crispy crust, airy or pillowy popularly served at breakfast. You toast the pandesal, layer it with what is locally called "kesong puti" or a white cheese made from carabao's milk, then the pesto and topped with a salad tomato. Totally yum!!!

Vincenzo, thanks for the tips! mixing all ingredients before adding fresh basil makes pesto easy to adjust to taste& not ruin the basil. I love pesto on my home made pizza, pesto, salami, mushrooms & good mozzarella= tasty pizza.I also add it to my fettuccini alfredo.

The two nice basil plants in my garden are ready & I’m on it! I’m using pistachios and Romano as well parmigiano. It feels like a pasta day but I also like it on pizza as well.

Couple of suggestions ... not all basil is good...even in Genova , we generally have to visit several shops before we find the best for making pesto
Also, the locals like to use Sardo cheese , or some blend Sardo and parmigianno
Lastly, in Genova you will find the pine nuts added to the blender last,,this gives coarser chop to the pesto and a more delicate mouth feel to the palate. You want to taste the pinioli

Something else that works good is to actually heat up the oil with the garlic to infuse the oil then let it cool to room temp before continuing. It really increases the depth of the flavor.

Thank you for your amazing recipe! I used to buy the pesto at a shop. I liked it, but the pesto tasted a bit sour to me. Before watching your video, I tried making pesto only with basil, oil and salt because I didn't have pine nuts in my kitchen. As soon as I get them, I will try authentic pesto. It's so addictive to make pesto with fresh basils. The fragrance is out of the world!

When I lived in Greece, I would use Greek walnuts instead of pine nuts and Kefolatiri cheese (pecorino) and substitute half the basil for parsley. Both basil and parsley grow wonderfully in Greece. The colour is amazing and it's a great alternative and worth a try. It's is actually my go to pesto now but you can't beat the real deal, beautiful shown and demonstrated here by the lovely Vincenzo!

I love your recipe. I make pesto all the time. I put it on everything. Sometimes I add other herbs and nuts. Or use more olive oil to make pesto mayonnaise. Always in the fridge.
vincenzo, loved the video. pesto is one of my favorites. i remember my grandfather buying the pignoli nuts from the salumaria when i was a kid. i would eat almost all of them and he got pissed lol. he used them for pesto as well as making the pignoli cookies as the italian bakery would. would you have a recipie for pignoli cookies?

After checking the basil for insects, a salad spinner will remove a lot of the water. Love your videos, Vincenzo! I plant basil, and after a good cutting for pesto, the plant doesn't have a chance to flower and it will keep growing.
