- Delicious Beef Udon Stir Fry, super fast and easy udon noodles recipe that you can make in 20 minutes! This udon recipe is simple but not bland, packed with Japanese flavour. Perfect dinner idea for busy weeknights!

Ingredients
▢250 g Beef steak ( around 8.8 oz ) cut in thin slices
▢400 g Udon noodles ( around 14 oz )
▢2 head Pak choi
▢100 g Mushroom ( around 3.5 oz )
▢1 tbsp Garlic Finely chopped
▢1 Onion
▢2 Spring onions
▢2 tbsp Vegetable oil or neutral flavour oil
Stir Fry Sauce
▢2 tbsp Mirin or Shaoxing wine
▢2 tbsp Light soy sauce or regular soy sauce
▢1 tbsp Dark soy sauce
▢1 tbsp Sugar
▢1 tsp Sesame oil
▢½ tsp Corn starch
Instruction
Blanch the udon noodles with hot water and set it aside.
Mix all the sauce ingredients in a bowl and cut the beef into thin slices.
Season with 1 tablespoon of stir fry sauce mix and prepare the vegetables.
Stir fried the beef slices for 2-3 minutes and add garlic and onion slices follow with the mushroom.
Then add the pak choi and toss it well.
Next place the udon in the middle of the pan, pour the sauce mixture in.
Cook for another 2 minutes until the sauce and other ingredients combine evenly.
Turn off the heat and sprinkle chopped spring onions.

What's the nearest substitute if I can't find Udon noodles?
You can use ramen noodles or egg noodles.
I tried making udon noodles, the noodle were kinda dry in the centre but not like dirt dry more like tough dry. any tips? did I need to cook them longer? sorry never even had them a restaurant before but they look so tender when they’re being prepped
Suggest boiling the udon in hot boiling water for a few minutes. Then rinse with cold water before adding to stir fry or soups. Cooking time depends on the types of udon you use. For vacuum sealed packs it takes udon 1-2 minutes to blanch them. For dried or frozen udon it takes about 10-12 minutes. I hope this helps.

questions what is light soy sauce and dark soy sauce? Like one less sodium then the other ?
i usually use tamari soy sauce as my dark

Despise these recipes with no ingredient quantities. Rookies can’t just eyeball it. I get that it’s to taste but gives a general baseline at least.
