How to make the tastiest vegan potato salad | Amaze all your guests with this delicious side dish

Ingredients (serves 6 - 8 as a side dish)
750g baby potatoes (or white potatoes cut into bite size pieces)
1 red onion (or white salad onion or a bunch of spring onions)
1 bell pepper (red or yellow works best - green can be a little bitter)
1 stick of washed celery
2 medium dill pickles or sweet gherkins
good pinch of salt & pepper to your taste
1 cup / 220g / 240ml vegan mayonnaise (My favourite is Hellmans)
1 tbsp apple cider vinegar
1 tsp yellow mustard (or use Dijon or wholegrain mustard)
1 tbsp of chopped dill or parsley
