Your knife skills and general movements cooking have gotten so natural, like you have absolute confidence! I've just gone vegan recently and it's hard for me to come to terms with losing all the cultural connections and amazing flavors found in traditionally non vegan foods out there. So your channel just has immediate value to me in showing that there doesn't have to be loss of all that.

Because it’s so hard for me to find sodium free stock, (heart reasons) I started too make my own however from my vegetables tops, ends, skins etc. As I prep food, I add them all to a ziplock bag in the freezer at the end of the week I’ll have a bag or bag & 1/2. I use my instant pot add the frozen vegetables top to max line with water and process in high for 30-35 minutes, high pressure and natural or forced release. Jar up like you do in fridge and use it through the week. Season for food type when adding to meals. I get a rich darker stock with a bunch of flavor. Can’t wait to try making Ramen and try out these recipes!! Thank you!
