Pro tip: For the skirt steaks, you do *NOT* want to let them marinade "as long as you can". 90 minutes max. 60 is great. Due to the citric acid from the orange and lime, if marinade the meat any longer than 90/100 minutes, you'll end up with ceviche steak. The meat starts to get weird and you can experience some issues grilling/searing it like you'd want.
Yeah 100%. I will say, I think it was mostly worded that because of the language barrier. If he wants a long marinade, he always specifically says "overnight". Guga words a lot of stuff kind of oddly. By "as long as you can", I really think he more meant like, marinade it while you do everything else for the recipe, and he most likely only even marinated it for like an hour max.
That's a good thing to note. I didn't think it would be as big a deal as with something like orange juice based marinade as it might be with say pineapple juice. I've been curious about kiwi fruit for marinating. What do you think about that?
@@Dazzwidd kiwi can be used as a tenderizer for meat because it has the enzyme that breaks down protein, similar to what pineapple does. I think the cap is like 30mins or an hour max depending on your size meat because too long and the meat will literally turn to mush lol

I grew up watching Alton Brown
thoroughly enjoyed this video, love collabs between my favorite food youtubers
This isn't a collab. Simply making someone else's recipes is not a collab. If Guga was on video with the other chefs and actually cooked *with* them, that would be a collab
as a german i thhank you guga for actually reacreating the doener feeling with your recipe, we have been cooking this 1-2 times a week for the past month
Hey Guga, i'm also totally a youtuber and your long lost nephew. Please cook for me...
He's not a "UA-camr" chef BUT, the Ultimate Cookbook 3.0 by Coach Greg Doucette is one I know you'd personally love and get plenty of use from. ...Also, Max Miller is a National treasure and must be protected at all cost.
Kinda sad nothing from Matty Matheson or B. Dylan Hollis
Loved this! Breaks my heart if “Papa” and Babish didn’t respond. Lots of love and effort in this video Guga 🤙🏻
Guga, your dogs are both the main character. All dogs are. Every dog is the main character in our lives
Very fun video! Love the concept. Was a bit surprised it didn't feature any of Joshua Weissman's cookook, but watcha gonna do? If you do a round 2, I would love to see you cooking something from Babish's cookook, or a sandwich from Barry of Sandwiches of History new cookbbook, a meal from Chef Jack Ovens' new book, or some amazing chicken curry from Chetna Makan's collection of cookbooks, or one of the soup or sandwich of Matty Matheson's new cookook offering.
Chef Rush saying cook book coming soon sent chills of anticipation down my spine
Also you forgot GCP and golden gully
And old time hawkey
And b Dylan Hollis and babish
Nick really is a twaaaaaat.
Guga I love your channel there’s been one thing I have been wanting to ask you I know how much you like doing the mystery meat and you are the dry age king I was wondering have you ever thought of dry aging surströmming maybe do 3 dry ages with it at different aging times I think that would make an amazing video, surströmming has a bad wrap with all the challenge videos but I think if anyone can turn it into something amazing you can keep up the good work brother I love your videos ☺️
15:44 "As in the end, check it out. This is what you're left with."
15:51 "As in the end, you're gonna be left with a nice, rich filling."
Damn! Joshua Weissman didn't reply? 😮
Too busy showing off his new kitchen and muscles :/
