    I remember one of the first videos I saw by Chef Lee where his son asked him to make a $200 wagyu steak gourmet. He looked dead into his son's eyes and said, "It's $200. It's already gourmet." I've loved this man ever since.

    For everybody wondering why chef Susur didn't receive the uncle title, consider: Uncle Roger calls us "niece and nephew". Chef Susur calls us "children". The only conclusion is that they are long lost brothers.

      Uncle roger speaks a lot before he thinks, you'll notice this when he corrects himself multiple times and submits to some methods being "Okay". I dont think he even noticed the fork never touched the pan because he was too busy already correcting the mistake verbally.

      I don't think he'll ever need one. He went over to Japan, became the number 2 Iron Chef on that program, came back to America and became an American Iron Chef, and then became the best one we had here. His uncle title was earned a long time ago. He more like God-Uncle now.

      Demon of mediocrity maybe. Asian people usually excel when they come to the West. Panda Express excel only at making mediocre restaurant be everywhere. Excel at making money off of westerners who think rice comes out of baggie and big chunks of overcooked fried meat covered in battered sugar is good food. There isn't enough MSG in the world to make it palatable but they try anyhow and dump loads on it to cover up the mediocrity..

    In one video, he shows his method for cooking a steak. He uses shallots in that video. I tried cooking steaks the same exact way and now it's my preferred method. So good.

    I’ve eaten at one of his restaurants. Had the 12 ingredient coleslaw and then the Peking duck main. Just nuts how good it was. Truly modern Chinese / Asian fusion

    Ain't beetrot Uncle Roger it's called watermelon radish!
    Radish Watermelon is a Chinese heritage Radish with a surprise...the lovely smooth white globes are cut open to reveal bright pink centres - no surprise they are also known as "Beauty in the Heart". The flavour is milder than other radishes - sweeter, less spicy. Thin slices look really amazing on a salad.

      @@bravery2047 To be fair, watermelon radish can be found in Asia (seen them in China, Taiwan, Singapore, Malaysia - places that I’ve been to that is), as well as North America (seen them in USA and Canada). Calling watermelon radish as beetroot is like calling shallots, onions (heck, shallots and onions are in the same family, whereas radishes and beets are not). Also, beetroot is purple & reddish throughout (from the outer layer of skin to the centre) - it’s a dead giveaway🤷🏻‍♂️

    You can use a metal utensil on a non-stick pan as long as you don't directly scrape on the pan with it. The iron chef didn't scrape the bottom he was kind of folding the top.

    My girlfriend and I ate Panda Express for the first time the other day. I'd say for Americanized Chinese food it wasn't half bad. I was just shocked that they actually had to wok stations in their store.

      Yeah Panda Express is not bad at all, especially when the food is fresh. If the staff is friendly you can ask them what’s being cooked in the wok right now and order that. I don’t know why anyone orders their noodle or fried rice, they’re both bad. Just get plain rice. Their Kung Pao chicken is the best Chinese American KPC I’ve ever eaten; it’s not sweet like at almost every other restaurant. All of the chicken dishes are decent actually. Orange chicken is sweet af, so avoid if that’s an issue (I do). Their limited run shrimp stuff is good also.

      @@ckannan90you are correct I personally don’t like Panda Express much the chow mein is dry the fried rice has a taste i don’t really like the only thing I kind of like is maybe the black pepper beef. I would instead go for a local Chinese takeout and not a chain

      Panda Express has been popping up in my area I was curious. But if it's really sweet I'm going to pass trying it.
      I add sweet & sour sauce to my fried rice that's sweet enough for me.

    I use to work for Panda Express a long time ago. Sometimes if we didn't have enough white rice cooked we would just use the brown rice.
    Also some times the cook can put a lot of soy sauce in the fried rice which makes it look like brown rice.

    I'm going to vouch for Bokksu actually, I was subscribed to them awhile back until I switched to Keto for a good while but while I had it it was awesome. There was one seasonal one that came around the time of the Sakura festivals and such and had a ton of awesome treats and all the things included are from locals. I'm not subscribed currently, but for anyone that's a fan of Japanese treats I highly recommend. Tempted to actually see if they're doing anything fancy now as reminiscing for this comment has me craving 🤔😅

    Just a little comment: best nonstick pans are ok with metal, but only blunt hits.
    No scratching or cutting.
    And i think ICHD used it just right.
    (Not sure what red pan is, looks more like cast iron)

      @@nerrickk9024 You can pretty clearly see pan contact at least a couple times. Not a big deal though. And I think the red pan is ceramic coated cast iron, at least that's what it looks like to me.

    Modern non-stick is tough stuff and you can use metal utensils in it provided you're careful. Scovill stuff is wonderful.

    Fun fact, in Indonesia there is a dish called Magelangan. It's basically a combination of fried rice and noodle. The food ain't suppose to go togather un everyone's mind but it did. And it was really good. If you go to Indonesia I suggest trying it as well as a lot of other foods from there especially the street food

      Where does it served? Never heard of it, nwver seen it. For me it is bad idea to eat both rice and noodle at the same time (except in this video). I'm amazed how some Indonesians like to have overload carbs. It's imbalance diet!

      @mayaparamita2254 Well, Magelangan, I forgot the origin. I think maybe it was from Central Java or Yogyakarta, but correct me if I'm wrong. You can find the food in Java like Jakarta, Bandung, or other places (I don't know outside Java if it sells them). I have to admit it might sound weird, but trust me, it was good. The different texture of fried rice and fried noodle really stands out.
      Though I kinda agree that overloaded carbs are bad. But compared to American portion foods, we are still healthier, in my opinion. Fun fact, there is a famous brand of noodle in Indonesia called Indomie. We Indonesian eat the fried noodle with rice. Sounds strange, but it was good. It really is food that I usually eat when I don't have money. The noodle kind of became the topping with rice

      @@mayaparamita2254 it’s called nasi goreng mawut in my place. The portion of the noodle always very small like they use it just for texture. My mother used 1 pack of noodle to make 5 portions of fried rice.

    Nice a Martin Yan reference. That takes me back to my childhood. On Saturdays I got the TV for cartoons, on Sundat it was Mom's for the PBS home shows: This old House, Antiques Roadshow, Yan Can Cook, Frugal Gourmet, Julia Child Jaques Pepin, America's Test Kitchen, and that stoner travel show with Rick Steves [watching him as an adult, Rick was high AF during that show].
