Creamy Pasta with Salmon and Spinach | Easy and Delicious

Recipe: Creamy Pasta with Salmon and Spinach
Serves 2 to 3
Ingredients:
200g (2 ½ cups) of fusilli
300g (10.6 oz) of salmon, bite size pieces
100g (½ cup) of sour cream
40g (1 ¼ cups) of spinach
½ medium brown onion
2 cloves of garlic, minced
2 tablespoons of chopped parsley
Salt and pepper to taste
80ml (⅓ cup) of pasta water
Instructions:
1. On medium-high heat, heat some light olive oil. Add the salmon pieces. Season with salt and pepper to taste. Cook for 1 ½ minutes on one side and cook for a further 1 ½ minutes on the other side. Set aside.
2. In a large pot, bring 2L (70.4 fl oz) of water to a boil on high heat. Before the water starts boiling, add 1 tablespoon of coarse salt and give a quick stir.
3. Once the water starts boiling, add the pasta and cook 1 to 2 minutes less than instructed on the packet. Drain and keep roughly 1 cup of pasta water or enough to cover the pasta to prevent it from sticking. Cover the pot and set aside.
4. On medium-high heat, heat some oil light olive oil in the same pan. Sauté the onion for 2 minutes. Add the garlic and stir for 30 seconds. Add the sour cream, stir for 10 seconds. Pour the pasta water, stir for 15 seconds. Season with salt and pepper to taste. Stir for 1 minute.
5. Add the spinach, stir for 15 seconds. Add the pasta and parsley. Mix for 1 minute until combined. Add the salmon and mix for 1 ½ minutes. Turn off heat.
6. Serve immediately and enjoy!
Notes/Tips:
The creamy pasta with salmon and spinach can last in the fridge in an airtight container for up to 3 days.
Any type of pasta can be used for this recipe.
