Easy Banana Muffins

- We’ve all been making banana bread during quarantine but I think this quick banana muffin recipe rivals anything out there right now.

RECIPE
5 ripe bananas
½ cup white sugar
½ cup brown sugar
¼ cup (½ stick) melted butter
⅛ cup neutral oil (I use grapeseed oil)
1 tsp of vanilla extract
2 whole eggs
2 cups of all-purpose flour
1 tsp baking soda
½ tsp kosher salt
About 6 tsp of white sugar to top muffin batter before baking (1 tsp per muffin)
- Preheat oven to 375 degrees (I use my convection setting)
- Combine flour, baking soda, and salt in one bowl (dry mix)
- Mash ripe bananas in another bowl and then combine both sugars, melted butter, oil, and vanilla extract. Mix together.
- Add 2 eggs to the wet banana mix, whisk to combine
- Add dry mix to the wet mix in three batches, whisking to combine in between
- Grease your muffin tin with non-stick cooking spray
- Pour batter into muffin tin
- Top muffin batter with additional white sugar
- Bake for 22-24min

Thanks for the recipe! I added baking powder , cinnamon, allspice,nutmeg, more vanilla,milk,1 banana and half a cup of flour. It yielded 16 muffins, I baked them for 22 minutes.The end result was amazing! Soft and fluffy!

@@kittykrafterit's not, it's a can of trader Joe's baking soda. Some baking soda does come in a can. I get that one snd always have to double check if I'm using baking soda or powder, haha.

Tip I saw in another banana recipe; if your bananas arent ripe, cook them at 350 for 15 minutes on a tray in the oven! I've never heard of this before, but the cook had 3 million subscribers so I'll trust him!

hey i did this with the same ingredients except that i substitute the flour for almond flour and add raisins and mix smashed nuts and man that was incredibly delicious. i think i could also use coconut oil instead of butter and grapeseed oil and it would come out perfect too. thanks for this recipe, greatest, simplest I've ever seen.

I just made these. I added chocolate chips to half of the batter. (My boyfriend's request ) i havent tasted them yet but my bf did n he loves it. So thank you for the recipe. I garnished the top of the plain ones with a slice of banana and then sprinkled the white sugar on it.

Well, I've just made a batch of these delicious muffins and just finished the taste test. My oven was a little too hot so the ones at the back got a little browner but it didn't seem to alter the taste. They are heavier than other muffins I've had, almost like banana bread in a muffin. These are all good things. You can really taste the banana; they are moist and they rise perfectly. I would definitely make them again. Thanks Matty!

Getting ready to make muffins and yours look so yummy! I make my own extract using vanilla beans and 151 rum, a quart at a time and aged a year... Also good in coffee 🤣 just don't drive after if you're a lightweight like me when it comes to alcohol...
I made a crumble topping it was amazing!
Also use a ziplock bag to mash the transfer to bowl, much easier

Can I freeze left over bstter
If I use a fork, I just mashed them on a plate. Easier leverage. If I use a bowl, I just use the potato masher but do not over-mash. Simple recipe. Thank you. Same issue here with the time. Muffins bake faster than the bread. Time saver.
Can I use baking powder in place of baking soda?
When I'm off my BS this year, Im eating a tray of these next year 100%.
