grab breaks match the hands they use in the animation, if they grab with a left hand first in the animation, it's a left break. The only ones that are true 50/50s or mixups, are the ones when you already got caught by something else, like the chain grab. In that case, only thing you can do is avoid being put in the disadvantage state in the first place, work your way back from the grab and avoid the setup/precursor altogether. Same thing as being corner trapped in SF, you can play through it, but you're always guessing, so you just avoid the tricks they use to get you in the corner if at all possible.

Learning Korean backdash would be extremely good for you. Takes a bit of practice but it's not that hard, and it will massively upgrade your mobility game.
There are people saying Bryan isn't hard because he is easy to win at lower ranks and saying character like Kazuya is hard . Now I believe Kazuya and Bryan are equally hard but the point they made don't work . Kazuya is a hard character to learn but at lower ranks you can just spam hellsweep and demon paw to win most rounds . Hellsweep can't be reacted . Also ewgf is free in heat . But none of that disproves the fact that he is hard to learn . Just because you can spam with a character doesn't mean that character is easy to fully learn and use against a competent opponent . Nina is another prime example of that . Easy to spam and win at low-mid ranks but hard to learn .
I get what you mean but spamming hell sweep and demon paw doesn't work because even though they can't fully punish it they still react to it like they react to it more because the lower ranks I find mash less often and are more patient like when I first started learning kazuya last week it was a lot harder getting him out of warrior then it was vanquisher rank even though I knew the same combos and hell sweep not because I feel like the higher the rank the more they mash

Probably bottom 3 in heat utility, underwhelming punishment aside from jet upper, bad poking, no panic moves, one of the worst fuckin powercrushes I've ever seen, they nerfed/took away a few of his key counterhit launchers like ff4 or wc df3, etc. Just a hard character to play in general I realized as I climbed through blue ranks with him.
I actually really enjoy seeing the progress you make in Tekken, similar to how LilyPichu has improved a ton since the Sajam tournament. Bryan's an interesting character because he actually has some good fundamental moves Pokes, keep out, jab strings, launcher etc. but at top level he's extremely hard because of the practically impossible (if you're mid-low level) Taunt Jet Upper Compared to Kazuya who's hard at all levels because he lacks some key moves (13f df1, df2/uf4 launcher) and his launcher is a hard input
