✅Ingredients
GRAHAM CRACKER CRUST:
• 9 graham crackers 1 sleeve, finely crushed
• 6 tablespoons melted butter
• 1/4 cup granulated sugar
CHEESECAKE FILLING:
• 16 ounces cream cheese
• 1/2 cup sugar
• 1 teaspoon vanilla extract
• 1 large egg
• 2 egg yolks
• 1/2 cup sour cream
• 1 pinch salt
• 1/3 cup super fine sugar

1️⃣ 00:00:15 - Preheat oven to 275 degrees F. Line a muffin tin with cupcake liners.
2️⃣ 00:00:27 - Make your graham cracker crust by stirring together crushed graham crackers with sugar and melted butter. Divide crush amongst cupcake liners and press into the bottom.
3️⃣ 00:01:25 - In a large bowl, beat the cream cheese and sugar together until smooth. Beat in vanilla extract, egg, egg yolks, sour cream, and salt. Continue beating until combined and smooth.
4️⃣ 00:02:15 - Spoon cheesecake batter into each cupcake liner until 3/4 full.
5️⃣ 00:02:31 - Bake in the preheated oven for 22-25 minutes until filling is set. Cool completely in the tin before removing.
6️⃣ 00:02:48 - After cupcakes have cooled, remove from wrappers. Sprinkle about 1 teaspoon of super fine sugar on top of each one. Use a kitchen torch to caramelize sugar, or line up on a tray and place under broiler setting in oven. Watch closely, rotating as needed until the sugar is caramelized. Serve chilled.

You have no idea how brilliant it was!! We didn’t have cream cheese, so we just grinded some paneer (cottage cheese) with sour cream! And it became bit watery so we added a bit of flour!! Just like your New York Cheesecake recipe has! And trust me... my family CAN’T GET ENOUGH OF IT!! Hahaha! Hugss ❤️❤️ oh, also didn’t get time to brûlée!! It all finished in minutes 🔥🔥

How do you soften the cream cheese? Just bringing it to room temperature?
What kind of food processor do you use? Mine broke years ago, but I never liked it. Also, my diet starts as soon as I make these cupcakes. Plus all the other desserts you make. 😜

What can I used instead of egg?
Did the cream cheese mixture make more than what you needed for the 12 cupcakes? It looked like quite a bit when you were scooping them out.
Nope, just the 12.
Yes I had that problem as well ...too much cream cheese mixture ...so I made more gram crust in cupcake papers and finished the mixture
Video: you need two egg yolks.
Me: saw three egg yolks.
The recipe calls for 1 whole egg plus 2 egg yolks. The third egg yolk you see is from the whole egg.

Idk if this is a dumb question... would a water bath make a difference?
Water baths are used to cook a cheesecake more evenly. With mini cheesecakes it’s not necessary as they are such a small volume they already bake pretty evenly.

James Warner she added one whole egg first then two egg yolks the other yolk was from the whole egg.
It's 1 whole egg + 2 egg yolks

It’s about 130 grams. Most of my audience is in the US (over 90%) so they’d be super confused and unable to make the recipe if I wrote it any other way. The metric measurements are always available on my website.
