I'm changing what I wrote, because after doing some online research, I found out what I did wrong. Don't go overboard, pressing the crust down. Barely do it. I pressed mine too much and it was hard and crunchy, which I don't like. Also, don't take the little cakes out of the wrapper, until completely cool, otherwise, the wrapper will tear the cake apart. As usual, this recipe was delicious! I've tried several of his recipes and they always turn out great. Just remember: It can be tricky making this, and takes some practice. You'll get it! This is the best cheesecake I've ever had. I also love his bubbly, easy going, and fun personality! THANK YOU Preppy Kitchen. five stars, of course! 🙂

These are amazing. If you add a dash of lemon juice to the batter and more sour cream, you’ll be in HEAVEN. Just make sure not to use too much lemon or it’ll curdle. 1 1/2 tsp max
I 10000000% made these and they were SO GOOD. Super easy to toss together. I was intimidated making a baked cheesecake so I thought a smaller version would be a good starting point. 10/10 hoardable snack. I also used a regular size cupcake tin.

I made these about a month ago! Just for me. Lol! So after they cooked and cooled, I placed them on a baking sheet and put them in the freezer until they were frozen. Then I put them in a Tupperware container with a piece of parchment paper between the layers. They’re phenomenal I take them out of the freezer and they are thawed in about 15 minutes or so. And they are just as good as they were when they were freshly baked! I frozen with no toppings and I am making another batch as I’m having a buffet dinner party and this would just be great! Thank you for an awesome recipe! This is a keeper!

I made the mini cheesecakes for my daughters birthday and they loved them. I made the traditional crust not using the nuts, because I didn't have them, and I made an Oreo crust as well. I reserved half the batter and flavored it with lemon emulation and added fresh blueberries. The regular batter I added some mini chocolate chips and left some plain. They were delicious! Thank you for this great easy to follow recipe.

I keep mini cheese cake's made in that size springform pan in my freezer. I'm a nurse in long term health care and love presenting my residents with their personal birthday cake. Fun to do different toppings.
@@curleyyyfriesxD I use 4 inch pans and have about 3/4 full. Bake 40 minutes or until the center is slightly jiggly but not wet when you touch it. Turn the oven off and leave in another 25 with the door propped open. Of course baking time depends on your oven and how much batter.

I just put mine in the oven and they smell amazing! The only thing I had to change was that I put toasted almonds in the crust instead of toasted pecans because that's what I have on hand. I can't wait to try them!

I made these tonight. I needed more melted butter, I used 18 graham crackers and 1/2 cup Almond flour (crushed up almonds), and sugar. I needed a whole stick of melted butter so things would hold together. I was able to get 24 mini cakes, no filling leftover, but about 1/2 a cup or so of crumbs. They came out great, and of course I had to test one, Yum! I also made a strawberry topping from frozen strawberries. I'll get to try that tomorrow on Thanksgiving. Thanks for the great recipe. You should have your own TV show.
Made your cheesecake twice. My mom and I, it is our First time making cheesecake ever. We Practiced for thanksgiving couple weeks ago and it was bomb. Everyone loved it. My second time was today so We can bring it to dinner tomorrow! Made the minis with left over. Can I just say.. you do not over complicate recipes. Love the mini cheesecake idea! Yours look lovely! These treats were trendy back in the 70’s-80’s! Although WE made them smaller yet.. more of the “dainties”variety I guess?,,, we just used the mini muffin/tart pan to bake in and then a “NILLA” Wafer/cookie as our base with the same cheesecake topped then with some of the canned cherry pie filling ! .. these, of course, would not be as luscious as your recipe, but on the “dainty tray” at Christmas they were perfect! Now! My memory is tweaked!… I should get some “nilla wafers” and make some “dainties” …!! Thanks John.. you are the best! Love all the copper.. and that Kitchenaid mixer in Copper is to die for! My partner and my baby who is 1 year old kept trying to eat it before they cooled down, and they loved it so much, they wanted more. I baked this recipe using Pecan Sandies (shortbread/butter cookies), and being a pecan addict, twice the pecans called for in the recipe. In short, it was delightfully creamy and amazingly delicious! The pecan cookie crust was so good with the hint of cinnamon.
You know what I think is AWESOME about this guy!! He will give you two variations if you don't have the utensils or you don't have the equipment he has he can show you how to do it without it . I laughed when you said the mini springform pan was too large - but only because you’re on camera. Your baking videos are so relaxing to watch after a long hectic day. I have even made a couple of your recipes, and they were so good! One was your key lime pie, and I can’t remember the other one (bourbon balls?). Anyway, this one looks perfect for bringing to a gathering. I have some wild picked dewberries in the freezer from last summer that might make a great topping.

I have watched so many of your recipes for a long time, and I finally was able to make it. It was the BEST cheesecake recipe EVER. My partner and my baby who is 1 year old kept trying to eat it before they cooled down, and they loved it so much, they wanted more. They both knocked out happily right after ❤ we decided we will make this at least 1 time per week😍

I baked this recipe using Pecan Sandies (shortbread/butter cookies), and being a pecan addict, twice the pecans called for in the recipe. In short, it was delightfully creamy and amazingly delicious! The pecan cookie crust was so good with the hint of cinnamon.

It's so extra (and, I'll admit, time-consuming), but it's SO GOOD, and I bet it would be AMAZING in a cheesecake recipe! I used 4 total. 2 whole eggs (whites and yolks) and then 2 egg yolks (leave out the whites)

I laughed when you said the mini springform pan was too large - but only because you’re on camera. Your baking videos are so relaxing to watch after a long hectic day. I have even made a couple of your recipes, and they were so good! One was your key lime pie, and I can’t remember the other one (bourbon balls?). Anyway, this one looks perfect for bringing to a gathering. I have some wild picked dewberries in the freezer from last summer that might make a great topping.

Made these yesterday and they came out great! I made some with left over passionfruit that were kind of sour but the sweetness of the cheesecake made it taste a light tropical flavour.
