once you refrigerate the cake the burnt sugar layer won't be crunchy and crackly anymore though. When we make creme brulee and it's meant to be kept for another day, what we did was to only put the sugar on and burn it right before eating. Maybe that would work for this cake too? Otherwise, looks fantastic and I really want to try this recipe!
