the trick is none of them are perfect. The camera hides a lot of imperfections and you can always touch up with your previous colour if you're not happy. Try not to worry about being perfect and you will soon add them to your painting toolkit :)
I found the daunting bit not believing it would build up. The best thing you can do is start on something you are less bothered by and build up to the nice models. My Gaunts for example are 1 highlight thick coats for tabletop, and it really built up my confidence on brush work and paint coverage. As I moved to different models I used thinner coats and more coats and more highlights. It really helps. Do the chaff first when you are less confident in a technique.
Those thin wash layers have always been daunting to me, but the transitions you get are incredibly smooth
