Cook Once, Eat All Week: Spaghetti Bolognese Meal Prep

    With a homemade Bolognese sauce made from ground beef, tomatoes, and aromatic herbs and spices, this recipe is a classic Italian dish that you won't be able to resist. Plus, it's packed with protein!
    This recipe is perfect for meal prepping, so you can make a big batch ahead of time and enjoy it for lunch or dinner throughout the week. Simply cook up a big batch of spaghetti, portion out the sauce into meal prep containers, and you're good to go!

    Ingredients:
    750g lean beef mince
    800g canned tomatoes (whole, diced or crushed)
    1 large brown onion, diced
    1 and a half carrots, diced
    3 sticks of celery, diced
    3 cloves of garlic, diced
    2 beef stock cubes
    150ml of water
    20ml of soy sauce
    1 tablespoon of tomato paste
    1/2 teaspoon of oregano
    1/2 teaspoon of rosemary
    1/2 teaspoon of black pepper
    350g spaghetti (uncooked)
    10-15g Parmesan cheese
    Salt to taste
    Directions
    1. Begin by Fill a large pot with water for our pasta, set it on the stove over high heat . Add 2 large pinches of salt and place on a lid, we will start cooking our pasta when our bolognese sauce is nearly ready
    2. Prepare the vegetables. To make the mirepoix, dice the onion, carrot, and celery into small pieces. The ratio should be 2 parts onion to one part carrot and celery.
    3. In a large pot, set over medium-low heat, lightly spray with oil and add the mirepoix. Slowly cook or sweat them down for about 10 minutes until they are soft but not burnt or caramelized. Remove from the pan and set aside.
    4. Using the same pot set to high, allow it to heat up and lightly oil it. Add the beef mince to the pot and leave it for 1-2 minutes without moving it. This will allow the meat to caramelise and develop a brown crust on the bottom. Flip the mince and repeat on the other side.
    5. After 1-2 minutes, break up the mince and cook until the juices evaporate and it begins rendering in its own fat. It should start sizzling. Add the diced garlic and 1 tablespoon of tomato paste. Stir to combine.
    6. Add the canned tomatoes, 20ml of soy sauce, 2 beef stock cubes and 150ml of water. Finally, add 1/2 a teaspoon of oregano, rosemary and black pepper and stir to combine.
    7.Bring the pot to a boil, then turn to medium-low so it's just simmering and place a lid partially over the pot. Continue to simmer the Bolognese until the sauce begins to thicken, this should take about 8-10 minutes.
    8.While the Bolognese sauce simmers, add the pasta to your boiling water and cook for 8-9 minutes or according to your pasta packaging.
    9. Once the pasta is cooked and the sauce has thickened, add about 100ml of pasta water to the sauce. The starch in the water will thicken and emulsify the Bolognese sauce further.
    10. Drain the pasta and add it to the pot with the Bolognese sauce. Stir to combine.
    11. Finally, taste the sauce and add salt as needed. Divide the spaghetti Bolognese evenly over 5 containers and top with parmesan cheese if desired.
