Today we are going to prepare an authentic Santa Fe ajiaco, yes! The one that brings guasca and chicken, some compare the Bogota ajiaco with a sancocho, but they are very different, this one brings guasca and various types of potatoes, it is very easy and simple. But so as not to get too confused, here are the ingredients:
3 L of water
2 chicken breasts without skin (You can add thighs, or whatever you like)
800g of Creole potatoes
500 g of potato pastusa
500g of potato sabanera or, failing that, potato nevada
1 handful of chopped guascas
4 sprigs of coriander
3 branch onions
milk cream and capers to taste
